I bought some tahini after hearing lots of people rave about it, but had some trouble getting into it - i just couldn’t understand what the hype was about. butttt i tried a salad dressing recipe adapted from @thefitveganchef and i suddenly got it. i just eyeballed amounts, but i mixed roughly equal parts tahini & #sugarfree pancake syrup with a little bit of salt, a squirt of lemon juice, and enough water to make it a good dressing consistency. i think this is my new favorite dressing - it was good.

Nice little vegetarian taco salad tonight! i made the taco “meat” by soaking some tvp in a mixture of water, olive oil, taco seasoning, and garlic powder. added it to a pre-made bagged salad mix along with a whole mongo avocado, some nutritional yeast, garlic powder, lime juice, a little bit of nacho cheddar popcorn seasoning, some fresh cilantro, olives, roasted sunflower seeds, and sundried tomatoes. it was absolutely lovely!

Can you ever go wrong with cheese and pasta? i decided to add a little tomato paste to my #paleo pasta and shredded mixed cheese to spice things up a bit (and some garlic powder because everything is better with garlic). the result was kind of a hybrid between spaghetti and mac ‘n cheese in the best way. and i didn’t even have to open up a new jar of marinara!

Turns out you can make a low-carb, high-protein one-minute granola with just two ingredients! i added a little bit of sugar-free pancake syrup to some tvp, mixed it around, and it was the perfect sweet crunch element to add to my pudding! this pudding was half a can of full f*t coconut milk + some extra coconut cream, stevia, vanilla extract, and 1 tsp glucomannan. it was so creamy and rich, and i loved the chunks of coconut cream in there! combined with the sweet crunch from the tvp granola - perfection! next time i might add a little bit of walnut oil to the tvp granola to make it even richer and more decadent :) #keto #lowcarb #lchf #dairyfree #vegan #vegetarian #pudding #tvp #healthyfood

I found these beautiful “autumn mix” pre-made salads at the store yesterday with a mix of greens, butternut squash, sunflower seeds, and pumpkin seeds. i served mine with some ground turkey that i browned with some taco seasoning and garlic powder. i wanted a cheesy sort of dressing to compliment the taco meat, so i just added about a tablespoon of nacho cheddar popcorn seasoning and mixed it in with the juices from cooking the meat and it was actually crazy delicious. everything worked together so deliciously that i just had to take a picture after i tasted it :) #salad #lowcarb #keto #tacosalad #lchf #healthyfood #yum

Tried making a #dairyfree alfredo sauce tonight! i used half a can of full-fat coconut milk, 2 heaping tbsp nutritional yeast, garlic powder, onion powder, salt, pepper and a little bit of lemon juice. i served it over green beans with some baked tofu and homemade coconut “bacon” and oh my goodness it was incredible. it didn’t really taste like regular alfredo sauce, but i think it was actually better (and this is coming from a cheese addict). the picture doesn’t do it justice at all, but i’m already dreaming of the next time i can make this.

My favorite coconut flour wrap/tostada/pizza base (½ tb/6g coconut flour, 1 tsp psyllium husks, 3 egg whites, ¼ cup water, a pinch each of baking soda, taco seasoning, & garlic powder, cooked in 1 tsp ghee) topped with a whole (admittedly rather overripe) avocado, homemade coconut “bacon,” nutritional yeast, a little bit of popcorn seasoning, fresh cilantro and drizzled with a bit of hot sauce! it certainly wasn't beautiful, but this combination worked really well, and my belly certainly enjoyed it!

Broke in my new silicone muffin liners today with some mini cherry muffins! 75g almond flour, ¾ cup water, 1 egg, 2 tb erythritol, a pinch of baking soda, salt, and lemon zest, plus a little bit of lemon extract. i baked them for about forty minutes and they were addictively delicious.
