I love it when something super simple and super healthy turns out to be super delicious! like this bagged salad mix i dressed with equal parts red wine vinegar & olive oil, before mixing in some toasted sunflower seeds and h**p hearts. lovely!

So i tried my hand at a low-carb bbq pizza today! the crust was my favorite protein-packed keto concoction: 50g vital wheat gluten, 1 tb psyllium husks, 1 tb ground flax, ½ tsp baking soda, 1 tsp erythritol, 1 instant yeast packet, and enough water to make it doughy. i baked it for about 15 minutes before pulling it out and topping it with some chopped red onion, cooked shredded chicken, #sugarfree bbq sauce, and fresh mozzarella balls. baked it for another 10 minutes and then topped it with some fresh parsley (i didn’t have the cilantro most bbq pizzas call for, but this was a pretty awesome alternative) - it was pretty darn fantastic.

There are few combinations better than cheese, tomato, and bread. especially when it’s warm and the cheese is melty and the tomato juicy. i kept it healthier with some #lowcarb #paleo bread that was on sale at the store (made mostly of flax), which i toasted with some shredded gouda and tomato slices. so good!

I’m so obsessed with this #paleo #vegan coconut milk “alfredo” sauce. 1 small can (165 ml) full-fat coconut milk, 2 tb nutritional yeast, a couple good squirts of nutritional yeast and salt, pepper, garlic & onion powder to taste. i also put some turmeric into this batch for some its awesome health benefits (and a bit of color!) this time i served it over a pound of steamed brussels sprouts, along with some baked spicy pepper tofu and homemade coconut “bacon,” for a super tasty, #lowcarb meal. i love healthified comfort food.

Salami was on sale today! what better way to indulge than to serve it on one of my favorite low-carb “wraps” (½ tbsp coconut flour, 1 tsp psyllium husks, 3 egg whites, ½ cup water, a pinch of baking soda, salt, pepper, garlic & onion powder cooked in 1 tsp ghee), along with some soft cheese & #sugarfree ketchup! yup, this was good.

Ratatouille! i was excited to see this frozen ratatouille mix at the supermarket, which contains tomatoes, eggplant, zucchini, onions, red peppers, and green peppers. i ended up sauteeing it instead of baking, since i was using the oven for something else, but it was still pretty darn good! i kept it simple and, for a pound of the veggie mixed, added 1 tb each of olive oil, balsamic vinegar, and tomato paste, some salt, pepper, and italian seasoning. it’s pretty amazing how healthy this classic, simple dish is - and how delicious!

I’ve been intrigued by these greek yogurt mac ‘n cheese recipes that are all over the internet, so i finally gave it a try! well, sort of - i didn’t have greek yogurt, but i did have a nice creamy, full-fat european-style yogurt that worked pretty well here!. i cooked about 100g dry pasta (my favorite #lowcarb #paleo noodles) al dente, leaving in a couple tbsp of the pasta water, then added 1 tsp olive oil, 150g (about half a cup) yogurt, and 100g (about a cup) of shredded gouda, cooking over low heat for about five minutes,. i also added in some salt and pepper. the verdict? definitely delicious. i think next time i’ll shred my own cheese though, rather than using pre-shredded, and try to stir a little more frequently, but it’ll be a repeat recipe for sure!

I made a peanutty version of my usual tahini salad dressing! just equal parts creamy peanut butter and water (maybe a 1.5 tb of each?) along with 2 tsp acv, a sprinkle of salt, and enough water (about ¼ cup) to make it nice and drippable. i heated the mixture up to really blend it together, and then drizzled it over these brussels sprouts along with some of my favorite homemade coconut “bacon” and baked tofu for a really delicious, #vegan #lowcarb dinner!

I was craving some baked beans, so i made a super quick & easy, #lowercarb version of them today! i used a small can (140g) of soybeans as my base (they’re a great, low-carb alternative to regular beans) and mixed in 2 tb #sugarfree bbq sauce and 1 tb ketchup (also with no sugar added). then i sprinkled in some garlic powder, onion powder, and about 1 tsp of acv. it was an awesome way to get that fix in!

Made my own #vegan “bacon bits” today! i just marinated ¼ cup tvp in a mixture of ½ tb tamari, ½ tb liquid smoke, 2 tsp #sugarfree pancake syrup, 1 tsp acv, 1 tb vegetable broth and a sprinkle of smoked paprika. i added them to a salad, along with some toasted sunflower seeds, chopped sundried tomatoes, and ranch dressing, and it was super tasty!

So this was a pretty delicious frittata/omelette/egg thingamajing (frittomelette?). 2 eggs + 2 egg whites mixed with garlic powder, onion powder, & 1 tb parmesan. they were cooked in 1 tsp coconut oil along with some leftover jamon serrano i had, and then topped with trader joe’s #everythingbutthebagel seasoning and #sugarfree ketchup. an awesome start to my day!

Sweet baby carrots + rich cheese is always a winning combination in my books. this time it was leerdammer cheese, which i melted over my steamed carrots along with a drizzle of olive oil. i topped them with some eggs fried in coconut oil and topped with trader joe’s #everythingbutthebagel seasoning for some delicious protein that complimented the sweet and savory dish perfectly!
