This was an awesome veggie medley! 1 lb steamed frozen cauliflower, 1 can butter beans, a handful of olives, 1 tb olive oil, 1 tb white wine vinegar, italian seasoning, a little bit of fresh parsley, topped with 4 #everythingbutthebagel seasoning fried eggs. not exactly colorful, but simple, satisfying, and delicious!

This healthy chocolate pudding is so good; it’s hard to believe it’s not the real deal. just a little over a cup of almond milk with some stevia, salt, instant coffee granules, and 1 tb cocoa powder (i warmed up the almond milk so that the cocoa would dissolve better), and 1 tsp konjac flour/glucomannan slowly mixed in to thicken it up. i cooled it in the fridge and then ended up topping it with some toasted hazelnuts and #sugarfree chocolate syrup, which elevated it to another level - it tasted super decadent, but was totally guilt-free :) #lowcarb #lchf #keto #vegetarian #vegetarianketo #vegan #veganketo #macrofriendly #paleo #primal

Guacamole salsa works great as a salad dressing too! i just poured some over a pre-bagged salad mix, and topped that off with some homemade coconut “bacon” for a delicious treat healthy side!

Finally got around to trying some of that low-calorie/carb "protein" ice cream that seems to be popping up all over the place. this was the breyer's caramel cake flavored variety. it really isn't a #lowcarb dessert, especially if you eat the whole pint like they advertise, but it was a fun treat. you could definitely tell that it was low-fat though; i think i'd rather just eat a full-fat yogurt or cream cheese or even #sugarfree full f*t ice cream to squash my cravings - they just taste better to me.

Now that i’ve got an awesome base low-carb wrap/tortilla recipe down (6g/1/2 tb coconut flour, 1 tsp psyllium husks, 3 egg whites, ¼ cup water, baking soda, seasonings of choice [i usually use taco seasoning & garlic powder] fried in 1 tsp ghee), it’s fun to play around with the toppings! this one had some #herdez guacamole salsa and homemade coconut “bacon” and was delicious!

This quick and healthy #singleserve pumpkin “pie” might be my new favorite dessert. ½ cup canned pumpkin puree, 1 egg, a bit of vanilla, stevia, salt, and cinnamon, and baked for half an hour. i’ve made it in the microwave in the past, but baking it makes it taste so much more authentic! i love to top it off with some #sugarfree whipped cream to make it extra delicious!

@herdeztraditions guacamole salsa is so darn good. made a tasty little dinner by pouring some of that deliciousness over some green beans which i sauteed in avocado oil, and then mixing in some ground turkey that i cooked with taco seasoning and tomato paste. happy belated cinco de mayo!

I had this fancy marinated canned salmon and figured it would be great in a salad! and it was - the oil and chardonnay it was marinated in served as a pretty awesome dressing, and was awesome with a simple mixed salad and roasted sunflower seeds!

This was a beautiful little fry-up. a couple of tomatoes, a couple of eggs, a whole avocado, cooked in some avocado oil and topped with some jalapeño slices and #everythingbutthebagel seasoning! breakfast of champions, right?

Simple, nourishing green beans! i just cooked them in some avocado oil and bone broth concentrate, along with a squirt of lemon, a little bit of garlic, onion powder, and almond flour. when they were cooked, i added in some h**p hearts for some #omega3 fatty action and nutritional yeast because it’s friggin’ delicious. i was kind of amazed by how crazy tasty this turned out - definitely going to be repeating it!

Gotta love hazelnut meal - it just contains a world of sweet possibilities! this little mini cake contained 30g hazelnut meal, 1 tbsp psyllium husks, about 1 tbsp erythritol, ½ tsp each baking soda and salt, a squirt each of stevia and vanilla extract, and an egg. i baked it for about 20 minutes, and then topped it off with some #sugarfree chocolate syrup, because nothing chocolate and hazelnuts are soulmates and should never be separated. ugh, this was perfection.
