Almost exactly a year later to the day, we received another delivery of aronia berries from @whitelockfarm in baltimore. possibly it has become the most popular vinegar we make, these tannic unassuming berries lend a grape-skin/wine-y/astringent character to the vinegar resulting in a “backwoods cabernet sauvignon “ (as isaiah likes to say) - bright, full, fruity, punchy “red wine” vinegar.

When we started our little company, we were adamant that every ingredient we used must contribute a significant amount of the sugar required for the vinous fermentation, and that everything be added right in the beginning. we considered any departure from that technique ‘infused’ vinegar, and why would i sell you that when you could make it at home quickly and easily?
like all dogma does, this idea served us well until nuance entered the picture. when one straw farm offered us their entire blueberry harvest to make blueberry vinegar, we took the opportunity to quickly referment a disappointingly mildly flavored batch of blueberry vinegar from the year prior. now it blurs the line between infusion and fermentation, and us with it. were we idealists or pedants before? are we pragmatic or hypocritical now?
the vinegar doesn’t care, it tastes better now.

Special batch: green zebras only. we got another 1500 pounds of tomatoes today and couldn’t resist doing a single variety heirloom tomato vinegar. they’re just so good.

We smashed 1000# of @chicanosol organic heirloom tomato “seconds” (which are beautiful and plentiful but maybe wouldn’t have been used- it’s been a hard season for farmers with this rainy weather) into a tank with some @htkrantz wildflower honey (to get the sugar right where it needs to be) and we will wait a while, and it will seem wrong (smell is not as *amazing* for a period of time) but then it rounds the bend and tomato wine is more *amazing* than you could ever hope, and then we make vinegar- because that’s what we do, and it’s really quite delicious, and this vinegar is pretty special to us for all of these reasons. (buy more tomatoes from your local farmers!🍅 )

Dug up about 20 pounds of horseradish root to grind for the black walnut bay sauce. we are making about 100 gallons this year using ingredients we have foraged and sourced locally. it’s an interesting historic recipe- we are finding we are adding ingredients as they become seasonally available- with the young black walnut leaves added first in the early summer.

We are really excited about this year’s batch of celery leaf vinegar. growing the celery leaf ourselves afforded us the ability to add about triple the amount- which so far has added an immense boost to the flavor and intensity. as this vinegar matures it will continue to change and reveal its unique characteristics- everything we love.
