Boil 1.5# new potatoes in extra salty water until tender. drain. get a cast iron pan on medium heat with some grease, smash potatoes gently in pan and leave on while preparing remainder of ingredients: 2-3 hard boiled eggs, chopped. a finely chopped shallot. finely chopped dill pickle or cucumber. dill. parsley. more herbs from your garden or windowsill. generous amount of whole grain mustard. add the warm potatoes. generous amount of keepwell celery leaf vinegar. finish with cracked black pepper and salt to taste.

Sorghum cane juice grown organically in southern maryland, coming alive in fermentation. pretty high brix, about 16%, it tastes like the sweetest green juice you’ve ever had-with hints of vanilla. we’ve made vinegar with it in years past, with great results(the vanilla/spice notes linger). we usually make sorghum molasses vinegar, but it’s nice to have the chance to compare it against a vinegar made with the fresh juice with some more vinegar-making experience behind us. it has a lot of potential as a source of locally produced sugar.

Started making the carolina gold rice koji for this, our largest batch of rice vinegar to date, back in october 2017. rounding the bend to completion. smells like candy.

During the secondary stage of vinegar fermentation, a biofilm forms as bacteria processes the alcohol into acetic acid. we remove this “mother” off frequently, to allow the liquid to have oxygen available. here is the mother skimmed off today, and you can see the sediment and imperfections, the vinegar essentially clarifying itself. as the vinegar progresses, the film changes dramatically, to near transparency nearing completion of the fermentation.
the process is lovely, and can give a lot of information.
