I made these chocolate coconut treats for passover, since no wheat flour is allowed during the holiday. these are made of layers that consist dark chocolate, vegan cream, coconut and passover cookies (can be subbed for regular cookies/buiscuits). so easy yet so delicious! i encourage you to try this comboโ˜บ๏ธ would you like me to post the detailed recipe?

White beans in flavorful tomato sauce ๐Ÿ… served with white rice. a hearty vegan dish that’s both filling and delicious. i used olive oil, onion, turmeric, maple syrup, black pepper and salt to make this tomato bean stew super warming and full of yummy flavors!

also, do you like my new diy backdrop? i actually planned to surprise you guys and open an online shop for my diy backdrops, but today i found out they’re too big and can’t be shipped ๐Ÿ˜ฉ i can sell them in my city but i think it’ll be hard to find buyers. any ideas? ๐Ÿ’•

What’s your go-to lunch? ๐Ÿฅ—

i love throwing delicious & wholesome ingredients that i have at home in a food processor, and get creative with new patty recipes each time! they are filling, yummy, fun to eat, and perfect for meal prep โ˜บ๏ธ๐Ÿ™๐Ÿป tell me what you like throwing together for an easy lunch idea ๐Ÿ˜

toasted almond sweet potato patties:

1 small sweet potato (190 grams), cooked
60 grams oats
60 grams almonds
1/2 tsp turmeric
1/2 tsp paprika
salt & pepper to taste
.
1. blend the oats & almonds in a food processor until you receive a flour-like mixture.
2. toast the flour mixture in a pan on a medium heat until golden and fragrant. mix frequently and be careful not to burn it. transfer to a plate/bowl and let it cool.
3. mash the sweet potato in a bowl. add the rest of the ingredients and mix well.
4. form the mixture into equal sized patties, about 1-2 tbsp each.
5. heat some oil in a pan on a medium heat (or use a non-stick one). fry the patties on each size until browned (about 5 minutes).

Toasted almond sweet potato patties ๐Ÿคค๐Ÿ˜ vegan & gluten-free! this recipe is so easy, yet makes a satisfying and wholesome dish that tastes absolutely delicious!! you have to try it outโ˜บ๏ธ๐Ÿ™Œ๐Ÿป what are your plans for the weekend?๐Ÿ’• i’m planning to spend time with friends, and reorganize my room with some new shelves and decorate it a little bit โค๏ธ

recipe:

recipe:
1 cup frozen mango
2 ripe bananas
a splash of dairy-free milk
.
blend everything in a high speed blender, transfer into a bowl and add delicious toppings ๐Ÿ˜

Vegan sweet potato tofu patties, served on a bed of fresh spinach and quinoa, topped with tahini & fresh mint leaves ๐Ÿƒ i love creating yummy patties like these ones, from plant based ingredients i have at home โœจ i always whip them up without measuring anything, but i measured this time in order to give you guys the recipe! have a beautiful tuesday ๐Ÿ’•

recipe:
2 peeled baked sweet potatoes
1 block (250 grams) tofu
1-2 tsps cumin
1-2 tsps paprika
1 tsp salt
1 handful of walnuts
1 handful of dried cranberries
2/3 cup millet flour
.

Vegan chocolate chip cookies ๐Ÿช these are crunchy & chewy, indulgent, delicious, and you wouldn’t believe they’re dairy-free! loaded with delicious melty chocolate chips and sprinkled with pink himalayan sea salt, these have everything you’re looking for in a cookie ๐Ÿ‘… hope you’re having a lovely week! ๐Ÿ’ž

recipe:
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 1/4 cup chocolate chips
1/2 cup brown sugar
1/2 cup melted vegan butter
1/4 cup water
1 tsp vanilla extract
sea salt to sprinkle on the cookies
.
preheat the oven to 180 degrees celsius, and line 2 baking trays with parchment paper. add all the wet ingredients and sugar to a big bowl and whisk until well combined. add the dry ingredients and mix until you get an even cookie dough mixture. form into cookies (~2 tbsp each), sprinkle with sea salt and bake for 12 minutes.
