Cheddar ranch popcorn chicken 🤤
ingredients (for 4 servings)
2 chicken breasts
2 cups buttermilk
1 packet ranch dressing mix
2 cups cheese cracker
oil, for frying
1. chop chicken b*****s into bite-size pieces.
2. in a large bowl, combine chicken, buttermilk, and ranch packet.
3. refrigerate for 2 hours.
4. in a large zipper storage bag, crumble the cheese crackers into desired crumbs (to replace bread crumbs).
5. place c*****r crumbs into a medium bowl and coat each piece of chicken until fully covered.
6. heat oil to 350°f (180°c) and fry chicken until crackers turn golden brown (3 minutes).
7. place on a paper towel to dry.
8. serve with a side of ranch or any sauce.

Bacon cheddar loaded cheeseburger 🍔
ingredients (for 4 servings):
5 strips bacon
4 oz cream cheese, at room temperature
¼ cup green onion, thinly sliced
1 cup shredded sharp cheddar cheese
1 lb ground beef
salt, to taste
pepper, to taste
4 slices cheddar cheese
4 hamburger buns, toasted
1. in a pan over medium-high heat, add the bacon, and cook until crispy. transfer to a cutting board and roughly chop.
2. in a bowl, add the bacon, cream cheese, green onions, and shredded cheddar. mix well.
3. divide the ground beef into four even portions and shape into balls. form a well into the center of each, large enough for the cheese mixture.
4. place a quarter of the cheese mixture into the center of each ball, and enclose inside the ground beef. gently press each ball into a patty shape, and season both sides generously with salt and pepper.
5. heat a cast-iron pan over medium-high heat. once hot, add the burgers and cook for 4-5 minutes on one side.
6. flip the burgers, and cook for 2 minutes. add a slice of cheese on each burger and cook for an additional 2 minutes, until the burger is cooked through and the cheese is melted.
7. remove burgers from pan, and place on top a toasted burger bun. top with condiments of your choice.
8. enjoy!

Honey glazed fried chicken. i’m in love.
ingredients (for 8 servings)
2 tablespoons salt
3 tablespoons black pepper
2 tablespoons onion powder
2 tablespoons garlic powder
3 tablespoons paprika
2 tablespoons ground cumin
2 tablespoons dried oregano
2 teaspoons cayenne powder
3 cups all-purpose flour
4 bone-in, skin-on chicken drumsticks
4 bone-in, skin-on chicken thighs
3 cups buttermilk
peanut or vegetable oil, for frying
honey, for serving
1. in a medium bowl, add the salt, pepper, onion powder, garlic powder, paprika, cumin, oregano, and cayenne and mix until combined. in a another medium bowl, combine half of the spice mix with the flour, mixing until the spices are evenly distributed.
2. add the chicken to a large bowl and sprinkle with the remaining spice blend. mix until all the chicken pieces are evenly coated.
3. pour the buttermilk over the chicken and stir until the residual spices from the chicken have blended in with the buttermilk to create a light orange color. marinate the chicken in the fridge for 2 hours, or overnight.
4. heat the oil to about 325°f (160°c) in a large cast-iron skillet.
5. dredge each piece of chicken in the flour, shaking off any excess. dip them back into the buttermilk mixture, then back into the flour. make sure to shake off excess flour or it’ll burn while frying.
6. fry 3-4 chicken pieces at a time, occasionally turning them over. cook for 10-12 minutes, until golden brown, crispy, and the internal temperature reaches 165°f (75°c). rest the cooked chicken pieces on a wire rack to let excess oil drain off.
7. drizzle the chicken with honey, then serve.

Pineapple upside-down pancakes
ingredients (for 4 servings)
2 cups flour
2 teaspoons baking powder
1 ½ teaspoons baking soda
½ teaspoon salt
¼ cup sugar
1 ½ cups milk
½ teaspoon vanilla extract
½ cup butter, 1/4 cup (55g) melted, plus additional for frying
¼ cup brown sugar
1 ½ fl oz spiced rum, optional
20 oz canned pineapple ring with juice, 1 can, we got about ½ cup (180 ml) of juice once separated from the fruit
maraschino cherry
1. to a large mixing bowl, add flour, baking powder, baking soda, salt, and sugar. mix until thoroughly combined.
2. create a small well in the middle of the dry ingredients. add milk, half of the reserved pineapple juice, melted butter, and vanilla extract. whisk until ingredients combine to form a lumpy batter. set aside while you make the pineapple syrup.
3. add the remaining butter to small sauce pan over medium heat. once butter is melted, add brown sugar, the remaining pineapple juice, and r*m (optional).
4. bring ingredients to a boil allowing for the sugar to melt and caramelize. once mixture is smooth and has the consistency of syrup, remove from heat and set aside.
5. melt a small amount of butter in a frying pan over medium heat and add a slice of pineapple. cook pineapple ring until lightly caramelized on one side, about 2 minutes, before flipping it.
6. once flipped, fill the core of the pineapple with 1-2 maraschino cherries before pouring about ¼ cup (30 grams) of the pancake batter over.
7. cook until the edges start to set and the top begins to bubble, about 2 minutes, before carefully flipping the pancake--revealing the pineapple underneath. cook for an additional 90 seconds to 2 minutes until the pancake is cooked through.
8. store cooked pancakes in a 200˚f (90˚c) oven until ready to serve.
9. serve pancakes warm with reserved pineapple syrup.

ingredients (for 20 tots)
3 green plantains
1 teaspoon salt
1 teaspoon pepper
1 teaspoon chili powder
4 slices mozzarella cheese
4 hot dogs, or other preferred sausage
oil, for frying
1. grate the green plantains into a large mixing bowl.
2. add salt, pepper, and chili powder, and mix to combine.
3. wrap one slice of cheese around a hot dog link and cut into fifths.
4. take one tablespoon of your plantain mixture and encase one slice of the cheese-wrapped hot dog, shaping into a cylindrical “tot.”
5. repeat until all slices are covered and shaped, and place on a parchment-lined baking sheet. freeze one hour.
6. in a large p*t over medium-high heat, heat your oil to 375ºf (190ºc).
7. drop four to five tots into the oil and fry until golden brown, about one to two minutes.
8. place on a paper towel to drain excess oil.
9. serve warm with your favorite dipping sauce!

ingredients (for 8 servings)
1 bag frozen tater tot, thawed
½ cup onion, minced
2 cloves garlic, minced
1 lb ground beef
1 teaspoon salt
1 teaspoon pepper
1 teaspoon worcestershire
1 cup grated cheddar cheese, grated
cherry tomato, sliced
pickle, sliced
romaine lettuce, chopped
sesame seeds
1. preheat oven to 350°f (180°c).
2. in a greased muffin tin, place five tater tots into each cup. press the tater tots with a spoon into a cup shape.
3. bake the tot cups for 25 minutes. allow to cool for five minutes.
4. in a large skillet over medium heat, cook the onion and garlic.
5. then brown the ground beef and then drain on paper towels.
6. add in the worcestershire, salt, and pepper. remove from heat.
7. spoon about 1 tablespoon of the burger mixture into each cup. sprinkle cheese on top.
8. bake for 10 minutes or until the cheese is melted. allow your burger cups to cool slightly before topping.
9. top your burger cups with lettuce, cherry tomatoes, pickles, and sesame seeds.

Feeling zesty with this lime chicken, black bean, and rice dish! 🔥
ingredients (for 4 servings)
4 chicken thighs
1 cup white rice
1 ½ cups chicken broth
2 tablespoons olive oil
½ onion, diced
4 cloves garlic, minced
½ cup fresh cilantro, chopped
1 can black beans, drained
1 lime
salt, to taste
pepper, to taste
1. season both sides of the chicken thighs with salt and pepper.
2. in a large skillet, add the olive oil and place the chicken skin side down for about 5 minutes or until skin is golden brown. flip the chicken and cook for another 3 minutes.
3. take the chicken out and add the onions and cook until they’re translucent, about 5 minutes.
4. add the rice, stir to coat in the oil and onions, and toast for 3 minutes.
5. add the garlic then pour in the chicken stock and place the chicken on top of the rice. bring to a boil, then cover and simmer for 25-30 minutes, or until rice is cooked.
6. once cooked, take the chicken out and add in the cilantro, black beans, and the juice of one lime. mix until well-incorporated.
7. serve the chicken over rice and garnish with cilantro.

ingredients (for 3 servings)
* 1 sheet puff pastry, thawed
* 3 teaspoons sugar
* 2 egg yolks
* ⅓ cup sugar
* 2 tablespoons cornstarch
* 1 teaspoon vanilla extract
* 1 cup milk
* 6 strawberries, sliced
* in a microwave-safe bowl, whisk the yolks and sugar until pale in color.
* add cornstarch and whisk well. add the vanilla extract and milk. whisk until well combined.
* loosely cover the bowl with plastic wrap and microwave for 4 minutes, stirring halfway through. remove plastic and stir.
* cover with a plastic wrap and chill at least 30 minutes.
* cut the thawed puff pastry into three equal-sized rectangles.
* pierce each piece of puff pastry with a fork.
* heat a nonstick pan over low heat. place the puff pastry in the pan and cook for 10 minutes.
* flip the puff pastry sheets, and place a lid on the top of the pan. cook for 10 minutes.
* remove the lid and sprinkle 1 teaspoon of sugar on sheet of puff pastry. flip the pastry over so that the sugared side is on the bottom.
* bring the heat up to high. place a piece of parchment paper over the puff pastry and weigh it down with another pan. once the surface is caramelized, about 1-2 minutes, remove from the heat and let cool to room temperature on a cooling rack.
* place the custard in a piping bag fitting with an large round tip.
* pipe the custard on one sheet of puff pastry. top with a layer of sliced strawberries, then pipe another row of custard. top with another sheet of puff pastry, custard, sliced strawberries, custard, and the remaining puff pastry sheet.
* dust the top with powdered sugar.
