We stumbled upon carpets of chanterelles weaving through the woods yesterday. there were more than we’ve ever seen before and they were considerably larger than previous years. the heavy rainfall has created optimal conditions. there were all kinds of mushrooms at every turn. there was talk of removing articles of clothing to act as baskets but decided walking through the woods half n***d probably wasn’t a good idea!

Nettles are a plant that some people find annoying because of their stinging properties. however, nettles have been used for thousands are years for medicinal and culinary uses. in medieval europe the plant was used for its amazing diuretic abilities. i harvested some young nettle leaves (the early leaves are more tender) and added them to my noodle curry. they can be used in all kind of soups to add flavor and detoxify the body. just make sure they are thoroughly cooked before eating. ————————————————

sexy is a word that is oft used to describe a man or woman, a car, or an article of clothing. from time to time it’s used to describe flowers, especially those that closely resemble a vagina, but rarely is it ever used to describe a #fungi. exsudoporus (boletus) frostii is one sexy #wildmushroom. one look at its deep dark red hues accentuated by a lacy yellow reticulation on the stipe is all anyone needs to come to this conclusion.

now is the time to find this mycorrhizal #mushroom. it’ll be growing amongst the hardest of woods such as the mighty oak. in #cleveland and the rest of the #greatlakes area one can stumble upon a bounty of this mushroom quite easily for the red of its cap is so intense that i consider it to be the epitome of the color. it stands out from the forest floor like an elephant would amongst a flock of sheep.

i should say that this #bolete has all the hallmarks of many a toxic species. it rapidly bruises blue on its tube surface and exposed flesh and has a red spore bearing surface. due to this it has long been advised to only consume it if you are 100% certain in your identification. if you’re uncertain then leave it to live among the wild things.

things to look for in this mushroom include a deep dark red cap whose pelicle is fairly tacky, a margin around the cap that is white or yellow, olive-brown spores, a yellow dew forming on the red spore bearing surface in young specimens, and a reticulation so deep, rigid, and pronounced that it inspires a sense of awe.

this mushroom has a decent earthy and mushroomy flavor that is followed by a fantastic tartness reminiscent of lemon. we’ll be using @angelzimmerman70’s mushroom conserva recipe on these at @larderdb. their flavor and taste hold up well to being #pickled after they’ve been thoroughly cooked.

Check out the incredible cross-veining on the false gills of this exceptionally large cinnabar chanterelle (cantherellus cinnabarinus). most of the cinnabars i find are tiny, but occasionally, they get quite large. this patch was filled with absolutely huge specimens!

Did you know that essential oils have different properties than the fresh or dried plant they come from? it's true. one isn't better than the other, they are just used differently and have different active plant compounds.
for that reason, i usually have both the dried or fresh plant and the essential oil made from it in my farmacy cabinet.
today that plant is goldenrod. we use this as a fresh plant or dried as an herb for so many amazing things. got junk in your chest, make some tea from some fresh or dried leaves. need some support for kidneys, skin, allergies, circulation? you can make a tincture (totally not as scary as it sounds) salves and teas. goldenrod (solidago canadenis) is part of the daisy family. it is sometimes confused for ragweed and blamed for people misery and allergies but it's been framed and is totally innocent. promise. i love how much the plant smells like honey, i can smell it all day and never get tired of it. this is definitely one of my favorite plants to forage.

Cream of hydnum repandum soup. it's like cream of chanterelle soup but more mushroomy because chanterelles don't actually have much flavor (shots fired). this is a vegan take on the the classic labor of love cream of mushroom soup minus the vegan roux because i'm lazy and didn't want to do it. it's got onions, garlic, shallots, jalapenos, aaaaand coconut milk. and mushrooms too i guess... w/ @kt._.did @nnuebel @kyle_sipes
