Coconut tofu tacos by 📸 @3.bunnies 💛 via @vegangotgame #vegangotgame recipe:
ingredients
140z of diced tofu
for the tofu:
1/2 cup of full f*t coconut milk
juice and zest of 1 lime
1 tsp of ground ginger
1/8 tsp of salt
sprinkle of cayenne pepper
for the pineapple salsa:
1/2 cup of diced pineapples
1/2 cup of sliced grape tomatoes
1/4 cup of minced red onion
2 tbs of chopped cilantro
1 minced jalapeno
juice of 1 lime

for the chipotle mayo:
1/2 cup of vegan mayo (we used follow your heart)
1 chipotle pepper
tortillas
black beans
coconut jerky
how to make:
1. preheat oven to 400º f. in a large bowl combine all ingredients for tofu and mix well with a spoon. allow tofu to marinate for 10 minutes and transfer onto a baking sheet. bake in oven for 40 minutes each side.
2. combine all ingredients for salsa in a large bowl. mix well and set aside. in a blender combine mayo and chipotle pepper, blend until smooth and set aside.
3. once tofu is ready remove from. grab tortillas and add beans, salsa, and coconut jerky. finish off with chipotle mayo, fresh lime. enjoy!

Vegan omelette with tamari mushrooms, mashed avocado and cashew cream cheese 🥑🧀😍

☑ingredients

➡ for the omelet
🔸5 ounces firm silken tofu (drained and gently patted dry // 5 ounces yields ~3/4 cup)⠀
🔸2 tbsp hummus⠀
🔸2 large cloves garlic (minced)⠀
🔸2 tbsp nutritional yeast⠀
🔸salt and black pepper⠀
🔸1/4 tsp paprika⠀
🔸1 tsp cornstarch or arrowroot powder

➡ for the filling:⠀
🔸tamari mushrooms, kale, mashed avocado and cashew cream cheese⠀

☑instructions⠀
1⃣ preheat oven to 375 degrees f (190 c).⠀
prep veggies, drain and dry tofu, and mince garlic. set aside.⠀
2⃣heat a small-to-medium, oven-safe skillet over medium heat. once hot, add olive oil and minced garlic and cook for 1-2 minutes or until just lightly golden brown.⠀
3⃣transfer garlic to food processor, along with remaining omelet ingredients (tofu – cornstarch) and mix to combine, scraping down sides as needed. add just a touch of water to thin – 1-2 tbsp at most. set aside.⠀
4⃣to the still-warm skillet over medium heat, add a bit more olive oil and the veggies. season with salt and pepper and sauté to desired doneness. set aside.⠀
5⃣remove skillet from heat and make sure it’s coated with enough oil so the omelet doesn’t stick. spoon on the omelet batter, spreading it gently with a spoon or rubber spatula, being careful not to tear or cause gaps. the thinner and more evenly you can spread it the better. so you may not end up using it all.⠀
6⃣cook over medium heat on the stove top for 5 minutes until the edges start to dry. then place in oven and bake until dry and deep golden brown – 10-15 minutes. the longer it bakes the less soft/wet it will be, so if you prefer a more “well done” omelet, cook closer to 15 or more.⠀
7⃣using an oven mitt, carefully remove from oven with oven mitt and fold over gently with a spatula. if it doesn’t want to fold, you can serve it as a frittata or scramble! enjoy! 😍

🌱recipe: 🍂prepare sauce: whisk together: 2 tbsp korean fermented hot pepper paste (gochujang), 2 tbsp maple syrup (or to taste), 2 tbsp tamari, 1 tsp rice wine vinegar, 2 tsp water (or sesame oil). mix well. adjust ingredients to taste. 🍂cook mushrooms: wipe 1lb white or baby bella mushrooms clean with moist paper towel. (do not wash.) slice into chunky pieces. 🍂oil-free option: add mushrooms to heated non-stick skillet. (i use ceramic.) add a splash of water to hot skillet to create steam and allow mushrooms to start to cook. then add sauce to skillet and stir with mushrooms for another minute or so until sauce is hot and starts to stick. 🍂non oil-free option: heat neutral oil or vegan butter and add mushrooms to heated skillet. sauté until mushrooms start to brown. add sauce and mix another minute while heating until sauce is hot and starts to stick. serve.

Tofu vegetable lo mein 🌱😍

recipe:
1. cut 1-14oz block of extra firm tofu (pressed and dry) into about 3/4-inch cubes and bake in oven on lined baking sheet 400f until golden and slightly crispy, about 20 minutes.
2. cook 4oz wide lo mein noodles as per packet directions. whisk sauce: 1/3 cup low-sodium tamari or soy sauce, 1 tbsp + 1 tsp maple syrup (or to taste), 2 tbsp rice vinegar, 2 tbsp garlic chili sauce, 2 tbsp minced ginger, 1/4 tsp cayenne, 1 tsp sriracha (optional), salt to taste.
3. once tofu is ready, heat skillet and add sauce. cook until sauce starts to bubble.
4. add baked tofu and 4 sliced scallions and keep stirring while heating. quickly add cooked lo mein noodles and stir for another minute or so until heated through.
5. remove from heat and add cooked veggies of choice. (i added some blistered bell pepper and spinach.)
6. fold in 1/4 cup chopped roasted peanuts. add a few squeezes of fresh lime.
