Today i made one of my favourite pasta dishes. it’s super easy and tastes so so good! 🤗 you simply sauté some (for me, alot) of garlic in oil (i use rapeseed oil), then add a can of tomatoes, 1 small avocado, salt, pepper, nutritional yeast and paprika powder. blend with a handmixer untill smooth! mix with your pasta! 💫🤗
Made the easiest and the tastiest one p*t pasta dish for my mum today. she loved it, and not without good reason! i mean, here i’m talking classic tomato sauce with a slight hint of cheesiness and creaminess thanks to nutritional yeast and cashew milk respectively. and as the name suggests, all you need is one pot! this was more of an experiment and i didn’t measure the ingredients, but do say so if you’d like this recipe in your life 😄
i love cooking for other people for so many reasons. making food is my creative outlet so it’s great to get positive feedback. plus, a few years back my mum was highly sceptical of all things vegan, but now she has many meat and even dairy free days thanks to me showing her how delicious it can be - in fact, she’s my main recipe tester! so yeah, my favourite way to encourage people to eat more plants (that autocorrected to potatoes but i guess that works too) is by feeding them 🤣 what’s a meal that you love making for friends and family? •

while i love a good zoodle, i’ve been really digging bean pastas these days because you get the comforting feel of pasta but also protein 👏🏻 it’s a win-win! my fave brands are @tolerant.foods and @eatbanza - they’re both around 20g of protein per serving 💯💃🏻
roasted tomato pasta
1 box cherry tomatoes
1 tablespoon olive oil
2 - 3 garlic cloves, sliced
salt & pepper to taste
1 box of your favorite pasta
—> add tomatoes to a small baking pan. toss with oil, garlic, salt and pepper, and roast at 300ºf for 60 minutes. cook pasta according to package instructions. once tomatoes are done, stir them into your pasta and garnish with some fresh lemon juice (if desired).

Tomato orzo risotto 🍅 | an easy one-pot dish without the hassle of your typical rice-based risotto. (i mean, don’t you hate having to stir every minute and still get rice stuck to the pot? 😩)
the orzo is a game-changer: it reduces cooking time by half and doesn’t require as much stirring as regular risotto. oh, and pasta is just always a winning food choice. need i say more?
tomato orzo risotto (serves 4)
-1 tbsp vegan butter, or water if oil-free
-1 onion, diced
-3 cloves garlic, minced
-1/2 tsp dried basil
-1/2 tsp dried oregano
-8 oz (227) dry orzo, or other short pasta
-14 oz (400g) crushed tomatoes
-1 cup (240ml) vegetable stock
-1/2 cup (80ml) vegan white wine, or more broth
in a large pot, heat the butter and fry the onion + garlic for 4-5 mins. add in orzo and stir constantly for 1 min, then add wine while stirring for another minute. pour in the tomatoes, spices, and stock and combine well. once at a simmer, cover and let cook on low heat for 8-10 minutes. stir occasionally to prevent sticking, and add more stock as needed. when orzo is cooked to your desired texture, remove from heat and enjoy!
