Crispy smashed herbed potatoes ****** "golden brown and buttery, these spuds live up to their tantalizing name. a sprinkle of fresh herbs when they’re hot out of the oven maximizes the flavor…and the pretty." — althea dye, howard, ohio makes: 4 servings total time: prep: 25 min. bake: 20 min. ingredients 12 small red potatoes (about 1-1/2 pounds) 3 tablespoons olive oil 1/4 cup butter, melted 3/4 teaspoon salt 1/4 teaspoon pepper 3 tablespoons minced fresh chives 1 tablespoon minced fresh parsley directions preheat oven to 450°. place potatoes in a large saucepan; add water to cover. bring to a boil. reduce heat; cook, uncovered, 15-20 minutes or until tender. drain. drizzle oil over the bottom of a 15x10x1-in. baking pan; arrange potatoes over oil. using a potato masher, flatten potatoes to 1/2-in. thickness. brush potatoes with butter; sprinkle with salt and pepper. roast 20-25 minutes or until golden brown. sprinkle with chives and parsley. yield: 4 servings. test kitchen tips yukon golds and new potatoes are good substitutes in this recipe. we doubt you'll have leftovers, but if you do, these make a delicious breakfast hash the next morning. a heavy cast iron skillet can be used to smash these potatoes as well.

🚨: copycat (& healthier!) costco quinoa salad 👆🏻👆🏻👆🏻 here.... basically what #sidedish dreams are made of. this recipe is by far the most popular on my #blog, and so i’ve really been wanting a #video rendition. if you don’t mind a lil’ chop chopn’ of veggies and some pre-made #quinoa and lentils... this is a no-fail side dish for dinners, #potlucks, bbq, lunch... or great as a meal on its own! i like to add some chicken and extra kale sometimes and go to town 😋. ingredients * 1 cup uncooked quinoa * ½ cup uncooked lentils * ½ medium bell pepper (diced) * ½ cup cherry tomatoes (diced) * ½ medium cucumber (diced) * 1 cup kale (finely chopped) * ½ bunch of cilantro (finely chopped) * juice of 1 lemon * 3 tbs. white wine vinegar (or more to taste) * salt + pepper (to taste) instructions 1. cook quinoa & lentils according to package instructions; chill for 30 minutes in the refrigerator. 2. while quinoa and lentils are chilling, i like to chop my vegetables. 3. combine all ingredients in a large mixing bowl. 4. serve chilled.

Korean gochujang tofu - this is a dish to introduce your friends to tofu. the texture of firm tofu is similar to italian polenta or indian paneer. it absorbs flavours from sauces very nicely. i am using korean gochujang sauce here but you can use any of your favourite sauces, such as bbq, chipotle, teriyaki, etc. 😋 …… give it a try ✅
. ✏️ what you need * 1 tablespoon olive oil * 1 package of extra firm tofu * 3 tablespoon gochujang sauce * 1/4 cup tablespoon water * 1 tablespoon cilantro, roughly chopped * salt & pepper . ✏️ how to make this 1. slice extra firm tofu into 1/4 inch thick. blot off extra water with paper towel.
. 2. heat frying pan to medium high heat. add olive oil. add tofu slices. add salt and pepper. pan fry until brown on both sides.
. 3. add gochujang sauce or your favourite sauce, such as bbq, chipotle, teriyaki, etc. add water. cover. cook until liquid is evaporated.
