Tonight's dinner was inspired by the warm, sunny weather. i've had the windows open all day. after music group, we managed to fold washing and get some capsicum and tomato seeds into pots to germinate.
i didn't fancy having the oven on, so i made a warm potato and kumera salad with cannellini beans. it has raw veggies to compliment the soft potatoes and it's smothered in cashew cream 🀀

Matcha bliss balls with a spicy kick 🌢 super easy and delicious. i’ve been having these to curb some major sweet cravings. i blame the weather. here’s our recipe:
1 cup walnuts
1 cup medjool dates
3 tbsp matcha bliss (cacao, reishi, maca, matcha, cinnamon, pink salt)
3 tbsp raw cacao (or you can use more matcha bliss instead)
2 tbsp shredded coconut
pinch of cayenne pepper
pinch of sea salt
additional coconut shreds for rolling

pit your dates.
blend walnuts in a food processor until smooth.
add the dates, matcha bliss, cacao, coconut, cayenne and sea salt and blend until incorporated.
roll the dough into bite-sized balls and then roll in coconut shreds.
place the balls onto a parchment lined baking sheet and place in the freezer for a couple hours.

eat straight from the freezer or move the balls to the fridge for a chewier bite.

A super quick and easy stir-fry for dinner: ground beef, onions, garlic, ginger and kale with a splash of fish sauce and coconut aminos. not gonna lie, i really wanted some rice w this, so i doused it with @yaisthai hot chili garlic sauce. that did the trick... all i could think about was how spicy it was πŸ˜…πŸŒΆπŸŒΆ

recipe (serves 6 ppl) • 4 whole eggs beaten well with 3 tablespoons of milk, salt and chopped onions(2 small or 1 large), tomatoes(2 small or 1 large), green chillis(3) and cilantro(a handful). • fried in a frying pan for 1 min before topping the egg off with some cheese and fried garlic 🀀 • cover the pan with a lid for about 10mins(or until the egg turns a bit solid and the cheese melts- you can check this by poking a knife through the middle and if it comes out clean, it’s done). • serve directly from the pan or add some butter to melt along the sides of the pan and slowly nudge it onto a plate.

i added some spinach and had a protein shake with it πŸ‘Œ

Dinner was a 7sp throw together kind of night, but didn’t skimp on taste

rotisserie chicken b****t
center cut bacon 1sp
(i think bacon and i are in a relationship now πŸ˜‰πŸ˜‹)
heated in a pan sprayed with cooking spray
then after, added opa feta dill dressing 1sp and some mixed greens πŸ‘ŒπŸ» .
in the back i’ve got my basil corn recipe for 2sps (kerrygold, shallots, frozen corn. add basil at the end)

A day of transition, slowing down a bit. saving energy for the main event that will take place outside of tokyo in a place called mashiko in a few days - best known for beautiful ceramics. an event celebrating plants, music and nature. i look forward to morphing into calmness, harvesting what will be on our plates and getting inspired by my surroundings.

my host's and i were chatting to maiko an amazing chef whom we had the pleasure of visiting yesterday. he served amazing traditional japanese fair with his own twist. despite the language barriers. everything was communicated through our mutual love of food. where it comes from and the thrill of sourcing ingredients with care and so much love.

food is truly a universal language that doesn't need to be voiced through words. this is where the expression actions speak louder than words really rings true.

So my plating is so not on point tonight! blame it on this migraine headache that i have!
anyhoo i made chicken pesto meatballs with orzo pasta and spinach! can you say yummers if that's even a word πŸ€”

the meatballs are made with ground chicken, grated parmesan, minced garlic, pesto, breadcrumbs, salt and pepper and an egg.
the sauce for the meatballs has chicken stock, sour cream, garlic, lemon juice, and a little salt and pepper.

the orzo is store brought. i boiled the orzo and then sauteed some garlic and spinach and mixed it in with the orzo. i also added some grated parmesan at the end!
