Mac n’ cheese, trees, and chicken 🐚🧀🥦 cuing all the cozy feels with this comfort food din! 🥰 i cut up the broccolini and stirred it into the mac post-pic, which totally reminded me of dinners circa age 5 because that’s just how my mom used to serve it (who else grew up on broccoli mac n’ cheese? 🙋🏼‍♀️). -

Guys, trust us when we say this...there’s no such thing as good or bad calories. a calorie is just a unit of energy and it has no moral value.⠀

it is true, some calories are more nutritious and some are just delicious! we all know that if you're eating 1000 calories of junk food, your body won’t actually process the energy the same as if you were eating 1000 calories of whole foods, but that doesn’t mean that you should avoid delicious calories all together. ⠀

eating fruit doesn’t make you any “better” than if you ate the same amount of calories in a donut. your overall health is determined by what you do most of the time, not all the time, so do not stress about calories. you should aim to eat mostly nutritious ones, but you should also allow yourself to enjoy those delicious calories you love so much because tbh choosing fun foods from time to time has little to no impact in your health.⠀

this, my friends, is why for the first time in human history, there are more overweight people walking the earth than underweight. why might this be? well for one, our planted landmass in the united states is largely taken up by wheat, corn and soy production. we eat much of these subsidized crops, but also a lot of it is refined into oils and sugar that is then fed to cows (which also get a hefty subsidy.)

5% of the planted landmass in the united states is dedicated to growing vegetables, which is perhaps one reason why they're relatively so expensive! 90% of americans do not consume enough of them, according to the cdc, and may explain why the same proportion is deficient in at least one vitamin or mineral.

when you consider the research showing how one large daily salad (something i'm an advocate for and talk about in my book genius foods) might actually prevent brain aging, it becomes evident that society seems to want youthful, high performance brains to be a privilege of the upper class. maybe that’s it’s way of maintaining the status quo. but i think we can change that. what say you?

▪ another vegan full day of eating for you guys since you appreciate them so much and i really appreciate the support on those posts ! 💚 these meal examples are supposed to help you figure out what you can eat on a vegan diet ! note that these are merely examples and you can choose for yourself what foods you would like to eat... nevertheless, if you decide to give my lunch, breakfast & dinner ideas a try you need to adjust the amounts of each food item do your caloric needs or cravings (because these meals are really yummy...! 😉) that's also the reason why i didn't put any calories or amounts of each meal ! 🙌 🌱

👉 obviously, you can also swap out some items but the way i structured it, you will get the most important minerals, vitamins, antioxidants & overall phytonutrients from your lunch ! feel free to add more veggies to your meals or even more fruits as a simple snack ! 🌱
