Shepherds pie my way!
wasn’t sure what to make tonight for dinner, so i went with a favorite!
honestly it’s simpler than it sounds, kind of a throw it all together type of meal!
all that’s needed:
ground turkey. purple onion. garlic. bell pepper. broccoli. carrots. zucchini. sweet potato. vegetable broth.
love making individual pies...makes portioning easier!

Snacking is probably one of my greatest skills of all time (followed by ranting about smoothies from starbucks...of course). but my mad snacking skillz would be nowhere without the real mvp - almonds 🥇
.
i literally keep almonds everywhere: in my work bag, my everyday purse, my work desk, my car, my yoga bag, my travel bag... they’re everywhere. and i have to admit that they’ve saved me many a time from spending money unnecessarily or buying unhealthy/unsatisfying food in times of desperation (usually stuck in traffic in the car or walking home from yoga #foreverhungry )
.
so how much exactly is 1 portion? 🥄
- 1/4 cup
- 3 tablespoons
- lay them flat & cover a 3x3 sticky note (you likely have at least one of these floating around your desk)
- 1 small handful (should fit in a cupped hand)
- 23 almonds (i got that cute single portion tin from @californiaalmonds )

- 6g of protein per serving
- 3.5g of fiber per serving
- the tree nut highest in fiber, calcium, vit e, riboflavin, niacin
- good source of monounsaturated fats (13g of the “good fat”) which help with satiety
- may reduce risk of heart disease
- studies have found that incorporating almonds improved insulin sensitive for those with prediabetes & type ii diabetes

we’re still hangin out in utah (follow our adventures in my story!!), but i wanted to share a meal prep we just loved from a couple weeks ago - i basically doubled the @budgetbytes recipe for beef and cabbage stir fry, made a couple tweaks to the sauce, and paired it with some rice for the actual perfect meal prep. reheated perfectly and didn’t get wilty or weird after a couple days in the fridge.

My husband has been doing the 21 day fix. at first i was kind of irritated because he's one of those people that tries every diet but never sticks to it (& i'm a brat) and i'm the one who has to cook so i get stuck trying all these random fad diets with him. this one's pretty solid though.
i already know how to portion and eat right but i can see how for someone learning about nutrition this plan would really help teach you about building a solid meal. i also actually like the portion cups cause i stopped measuring my food a while ago and will eye ball it but what gets measured gets done right so i'm even #cutting a little on this plan by sticking to accurate portions.

i give it an a+

We eat rice on sunday especially in nigeria, but how do u eat yours and how many tablespoons of rice do you eat?

on my plate i have 6 tablespoons of rice mixed with beans, servd with vegetable (steamed carrot and beet) medley and some (2 table spoon) stew.
