Last days of carnival. i confess i’ve never been a carnival fan, since when, as a child, mum wanted me to wear my coat over my carnival costume, how unfair! if there’s one thing i love about this time of the year, though, is the array of rice fritters, cenci, fried paper thin dough, and schiacciata alla fiorentina, this orange and vanilla scented cake from florence. i always choose the one filled with cream and custard, as this is carnival, after all! you can find the recipe in the archive of the blog, if you feel like indulging yourself. #myseasonaltable

Wooden spoons may not seem like much, but trust me they are an essential kitchen tool. besides being super beautiful, like these from chiapas, they don't scratch or damage your cookware. they also don't absorb flavors. not to mention, they come in all shapes and sizes. you can find one that is perfect to cook a giant p*t of beans or one scrambled egg. so make sure you have one (or a dozen like me) in your kitchen. i have some from every place i visit in mexico, so every wooden spoon in my kitchen tells a story. ​#mexicancookstip

Black bean enchiladas with homemade sauce. saute 1/2 diced onion in olive oil, then add 2 cans of drained black beans, as well as cumin, salt and pepper, and heat through. warm your tortilla to make it pliable, and add about 1/3 cup of black beans, an ounce or so of shredded cheese, then roll up. repeat till you fill a baking dish, and top with your choice of sauce and cheese. i did half of them with sauce and half with no sauce and just cheese. bake at 350 for about 20 minutes till cheese is melted. and although not at all necessary, it did make the dish extra delish to use the homemade sauce (i didn't have cans on hand) and was *super* easy to put together using ingredients you most likely already have on hand. the sauce recipe is from cookie & kate and i highly recommend it 👍🏻 #meatlessmonday #vegetarian
