Sadly, beach 🏖 days are coming to an end😥
but i remember this day like it was yesterday! me and my b**e on the gulf in alabama! 💕it’s our favorite place and has become our family’s fav spring break destination!
i often get overwhelmed when i think about the fact that this lil side gig i’m so passionate about has literally paid for this trip the last 3 years!
totally makes it that much more amazing right! 💕
gone are the days of having anxiety over the credit card bill that would be in the mail a few weeks after our trip!
it sure does make the beach a lot more relaxing too! 💫

Leftovers... roasted apricot chicken thigh & drumstick with dates & olives; hassleback carrots with smoked paprika and roasted lemon yogurt sauce; crispy za’atar spiced kale. (10 #smartpoints)
apricot chicken
• 2 chicken thighs; 2 drumsticks
• 4 tbsp sugar-free apricot preserves
• 1 small onion, cut into 1/2-inch wedges
• 1 tsp ground cumin
• 1/2 tsp ground ginger • 1/2 tsp ground coriander • 1/2 tsp ground cinnamon
• 1/4 tsp cayenne pepper
• salt and freshly ground black pepper, to taste • 1/3 cup low-sodium chicken broth
• 1 cup pitted medjool dates, halved
• 1/2 cup green olives
• 1 lemon, juiced
preheat the oven to 350°. put onions, dates and olives into your baking dish. mix cumin, ginger, coriander, cinnamon, cayanne, and salt and pepper; dry rub the chicken with this mixture; add to baking dish. heat the apricot preserves, then brush over chicken. pour the chicken broth and lemon juice into the bottom of the baking dish. roast the chicken for approximately 25 minutes, checking on it and basting every 10 minutes. transfer the chicken to the broiler for 2 minutes. enjoy! 💋
i swear, even if you think you don’t like kale, you will love it prepared like this! the key to kale is deveining & massaging. you want to tear the leaves off of the stem and tear out any of the small, thicker stems running through the leaves. then after you wash and dry the kale, massage the leaves with a little olive oil (a little goes a long way). massaging the kale makes it tender. now you’re practically done… simply spread the kale in a single layer on a baking sheet and season with salt pepper and za’atar (alternatively, instead of the za’atar, i sometimes use a little cayanne pepper) and bake in a 350° oven for approximately 15 minutes. it’s best eaten right out of the oven, but sometimes i make a batch to snack on; just make sure you let it cool for before storing it in an airtight container otherwise it will get soggy.

I was so looking forward to having roast beef for dinner but as i looked over the recipe i was using i realized i spaced on getting broth. on top of that, i didn't have a specific plan for dinner tomorrow. so i stopped at the store after work! since the roast beef was out for today, i got some @alexiafoods waffle fries and some mixed roasting veggies and some asparagus. i had some pork kielbasa at home. so all i had to do was cook up the sausage while the fries and veggies cooked in the oven! yay for easy dinner! i did get some broth so i can make that beef tomorrow. i was seriously sad i wasn't having it today! but this was a good dinner. i enjoyed it.

This did not turn out as expected!! this is italian chicken sausage with roasted veggies (brussels, green beans, peppers, small yellow potatoes, garlic) seasoned with italian seasonings, and topped with a balsamic reduction glaze.
i wanted the sausage (which you can barely see), look more like meatballs, but i purchase fresh sausage (and take it out of the casing) and i guess this time it wasn’t packed as tightly as usual. 🤷🏾‍♀️
it was still delish and i topped it with fresh shaved parmesan. here’s to not as aesthetically pleasing as i desired, but still delish! 🥂
