1 pasture raised chicken carcass
bunch of herbs (sage / rosemary / thyme)
ginger - garlic - red onion - pinch of himalayan salt - apple cider vinegar + filtered water to cover

- either use slow cooker or large stock pot
- add ingredients + water near to top
- bring to boil
- scoop out any scum
- reduce to soft simmer, cook for around 8 hours up to 24 hours. personally i think 8 hours is enough
- strain the broth + into a glass jar or bowl
- lasts for 5 days in a cold fridge or you can freeze into ice cubes .
