Fruit scrap smoothie. well it's not really scraps it's the parts of the strawberries my kids don't eat, apple skins, pineapple cores, that other half of the banana that they just never end up getting to. these are packed with nutrients. and it's extremely wasteful. this is from one week. one week of kid snacks and lunches. this bag of scraps, 1 cup of whole yogurt, a splash of orange juice and a cup of ice makes about 4- 12 oz smoothies. little do they know they're getting the parts they don't like anyway. .

One of the biggest motivating factors in pursuing heath through nutrition actually came from something completely unrelated to my own personal health. in reading about nutrition i found a lot of information about the benefits of eating locally and eating seasonally. some of my favorite benefits? strengthening local economies by supporting smaller farmers, avoiding food waste by using produce that is aesthetically imperfect but still nutritious, and saving time and money by repurposing leftovers into work lunches.
was super inspired by @imperfectproduce ’s #newyearnowaste challenge to hop back on the bandwagon of avoiding the dreaded 2 month fridge clean out of all kinds of things i forgot to use up and have to throw out (is it just me?) or running to the grocery store for every little thing. 🀦🏼‍♀️ in honor of my crusade against lunch apathy, i prepped most of todays #notsaddesklunch last night and just combined it all so i could relax and enjoy my lunch.

These pumpkin gelatin fudge brownies are the real deal πŸ™Œ (1) they're completely gum-free aka no protein powder but still high in protein and (2) they can be enjoyed as a creamy pudding and as fudge squares 😱 #gumfreechallenge #newyearnowaste
1 can black beans, rinsed and drained
1/2 cup @malkorganics milk of choice (sub canned coconut milk)
1 cup cooked pumpkin
1/4 cup @woodstockfoods peanut butter
2 tbsp grass fed gelatin
1/4 cup dark cocoa powder
1 tbsp cocoa powder
1/2 cup @betterbodyfoods chocolate pbfit
3 tbsp coconut sugar
1 tbsp baking stevia
1/4 tsp pink sea salt
@enjoylifefoods mini chocolate chips
blend everything in a vitamix, and pour the batter into a lined brownie pan. bake at 350f for 15-20 minutes for a warm pudding dip, or refrigerate for a few hours and then slice to enjoy as fudge 🀀

already made this recipe twice with the improved version above, but i filmed the first trial so i'll post it on my youtube channel soon! πŸ˜„

My absolute favorite way to start the day πŸ‘‰πŸΌ smoothies.
since i’m not in my kitchen making my frothy coffee which is usually my breakfast, i’ve been making an effort to make sure i can find a smoothie for breakfast everyday while on vacation because that’s my favorite way to start the day. what i eat first thing in the morning is essential to me. it truly determines how i feel the rest of the day.
smoothies can be a sugar trap especially when buying one, so i always find the smoothie on the menu that has the least amount of fruit, always has greens (or i ask to add them), and an extra plus if it has superfoods and homemade nut mylk like this one pictured above. πŸ₯’πŸ₯‘πŸŒπŸ™ŒπŸ»
also, always take friends recommendations on places because there’s no better info than word of mouth from someone you know.⚑️thanks @jamieannwilks i’m officially obsessed with @christopherskitchen

Earth day was amazing! and the best part is that every day is earth day! i got to spend my morning sharing ideas for sustainability and healing of our planet with four little yogis. their hearts are beautiful and they already do so many mindful things to take care of the earth. i saw this quote later that evening and was so struck by the power and truth in this message. yes, it’s great to encourage and teach these efforts to the next generations, but we are the ones who need to take swift action. we need to respond thoughtfully, readjust our practices, and reclaim this facet of being human: to compassionately share and foster life with all other living things. so many beings will traverse the planet after us. we need to take responsibility in every way that we can. it starts with small steps! use your own grocery bags, bring a glass coffee thermos from home. consider the amount of packaging that comes with your foods, stop ordering take-out. your actions will scaffold and develop with time, but the most most most important thing to know is that your first step, no matter what size, is impactful. it is imperative. ❀️ start to reconsider. start rebuilding, start healing, and start caring for the bigger picture (and the little people within it). .

Sooo i've been thinking. and i've come to the realization that the world needs more broccoli stems! πŸ₯¦πŸ₯¦πŸ₯¦ while most of us (myself included) have been taught to just cook with the florets on a broccoli crown, those bodacious stems are seriously delicious and versatile, with a taste + texture similar to kohlrabi. πŸ‘ŒπŸ» i like to first peel the stems, then slice them up and toss with olive oil + flaky sea salt for veggie platters, or i'll simmer them until tender to make a puree or to whip up my newest obsession... ✨broccoli stem hummus✨

whoever said hummus has to have chickpeas needs to try this recipe, which is ridiculously light and fluffy + chock full of flavor thanks to all the fresh herbs / lemon / garlic / broccoli stems. pro tip: if you grow broccoli at home and your florets start going to flower (like mine did), pick those lovely flowers and garnish all your dishes with them (like i'm doing here πŸ‘†πŸ»).

so here's to re-thinking food waste and the ways we utilize every part of our hard-earned fruits + veggies, and here's hoping ya'll will give this recipe a chance! πŸ”ͺπŸ₯¦ ps - if you have any other creative uses for broccoli stems, please do share them in the comments. #learnmorewasteless
ingredients
2 hefty cups peeled and chopped broccoli stems
1-2 garlic cloves
1⁄4 cup tahini
juice of 1 lemon
3 tablespoons olive oil
1⁄2 cup chopped fresh herbs
1⁄2 teaspoon kosher salt

preparation
βœ”οΈ bring a p*t of salted water to boil. add your broccoli stems and boil for 5 minutes, or until tender.
βœ”οΈ drain the vegetables and plunge them into an ice bath.
βœ”οΈ drain the stems again and place them in a food processor along with the garlic, tahini, lemon juice, olive oil, chopped herbs, and salt.
βœ”οΈ process the mixture until smooth, stopping to scrape down the sides if needed.
βœ”οΈ taste and adjust seasoning as needed. enjoy!

want to know one of my biggest tips to anyone looking to lead a healthier lifestyle? a morning routine. the way you start your day can determine the way your entire day goes, and a morning routine can be as short as 5-10 minutes. that’s why i try to never skip my morning coffee. although my morning routine isn’t the same every single day (some days i work out in the morning some days i get straight to working), making my coffee and sitting down to drink it is the one thing that always remains the same. that time is for me and it’s the most essential part of my day πŸ’š

Here's a tip in how to waste less and make use of your veggie scraps. over the weekend i made my very own vegetable stock. it was so easy and all of you should give it a try. all my scraps from my veggies over the past few weeks i've been storing in the freezer. i've been saving potato skins, onions, carrots, celery, zucchini, garlic and a few other things. parts of the vegetables you wouldn't normally eat. did you know you can also use the paper part of the onion and garlic? so once my bag of scraps was full i poured it in a pot, (luckily i had a soup p*t with its own strainer, but it isn't necessary) and filled the p*t with water until it just covered the vegetables. i added a dash of salt, pepper, and thyme to the water. and i let it come to a simmer. i let it simmer probably for about an hour. it smelled so good! once it was done i strained the vegetables and there you have it! your own healthy vegetable stock. i put my vegetables in my compost, but you can easily just throw it in your garden since they are so mushy they will decompose pretty quick. you can use your stock to make soup or enhance your rice or quinoa with the flavor of the stock instead of using just water. what's cool about making your own stock is that it will never taste quite the same because you always have a different amount of vegetables available. ~

If you cook from home, then you definitely like to add flavor to your food. i know i do. i've been trying to find an easy way to buy spice with zero waste. i know sprouts has a bulk spice section, but the options are very limited. so today i stumbled upon a bulk spice store in oakland. it's called @oaktownspice i was so excited walking in, they had everything i could possibly hope for. from bulk teas and coco, salts, peppers, and so many herbs and spices. i asked if they could fill up my own jars from home and they were more that willing to fill them up for me. i've been saving so many small jars that i've used for other things and now i can upcycle them at this store and keep refilling them for the spices i need! the staff was very friendly and helpful. if you are in the bay area or visiting you should definitely check them out. ~~~~

For once, my eggs were not a frittata! this dish is so simple: fry up whatever veggies you have, then c***k eggs on top and stick the pan under the broiler until they’re cooked to your liking.
i topped mine with cilantro carrot top pesto using leftover carrot tops from my @imperfectproduce box! waste not, want not.

What to do with those pesky kale stems after you’ve made a bomb kale salad? πŸ₯—

before you toss this precious stem into your compost... chop them up and throw them into a soup/chili/curry! they are super nutritious - don’t let them go to waste. and they add a great texture. for a soup- add them to a p*t with your garlic, onion, carrots (anything else tough) to sauté before adding liquids. i added my kale stems to a delicious lentil soup in place of celery. πŸ₯•πŸ₯¨πŸ² other ways to use it is to throw into a smoothie, or make a #kalepesto! you can also sauté and add to stir frys. i bet they’d be great pickled too. πŸ€” .
