When you’re in the middle of something and it’s going great it’s so easy to ‘settle’ for that, i didn’t.

i can’t settle for anything and never will do, this world is so full of opportunities if you have the right mindset, people say “you make your own luck” they’re right but you have to create it, work hard at it, surround yourself with the right people, put yourself in the right places, it’s not going to come looking for you!

also if you are prepared to give back in some way, in any fuckin’ way, your drive, ambition and ultimately success is there to be shared around, remember it’s given to you to help others out as well, when you give you get... and, above everything else, be grateful for what you’ve fuckin’ got... phegan life

🌽🌶 i used to be such a big fan of chick-fil-a’s southwest salad.... now i just make my own!!! no cruelty involved 😎

for this salad:
- @gardein 7 grain crispy tenders chopped and topped with @franksredhot buffalo sauce
- mixed greens
- corn 🌽 - red bell peppers 🌶 - cucumbers 🥒
- black beans
- carrot ribbons 🥕
- crutons
- red onions

homemade southwest “ranch”:
- 1 or 2 tbsp vegan mayo
- tsp of lime juice
- paprika
- garlic salt
- onion powder
- cumin
- dash water
- whisk together and top salad!

little secret, i made this for my husband. i’ll post what salad i had instead tomorrow 😉 hint: i loooove me some falafel!

tricolor quinoa with crisped shiitake mushrooms, sautéed peppers and green onions, wilted spinach, and sliced avocado. (*made yesterday because my dogs had major dental work done on monday and dinner that night was whatever leftovers i could scrounge from the fridge)

This weather is keeping us on our toes!

on tonight's menu: creamy lentils with mushrooms and kale. a few years ago i found this recipe through @thefirstmess and it quickly became one of my favourite comfort food dishes!
my version of this recipe:
👇🏽
¾ cup green lentils, rinsed
1 tablespoon grassfed butter (coconut oil for vegan option)
1 medium shallot, fine dice (roughly 1/3 cup diced shallot)
1 lb (454 grams) mixed mushrooms, stemmed + sliced
sea salt and ground black pepper, to taste
1-2 cloves of garlic, minced
2 teaspoons fresh thyme leaves, minced
2 teaspoons coconut aminos
1 ½ cups vegetable stock)
1/3 cup aroy-d coconut milk
2 cups frozen chopped kale
👇🏽
•follow package instructions to cook lentils.
*be careful not to overcook them* •saute shallots in olive oil for 3-4 minutes. add sliced mushrooms to the p*t and let them sit for a full minute. •stir the mushrooms up and season with pepper. let the mushrooms sit in the p*t for another full minute.
*🍄very important! don't rush the mushrooms🍄
•season the mushrooms liberally with salt. add the garlic and thyme to the p*t and stir.
•once the garlic is fragrant, about 30 seconds, add the coconut aminos, drained lentils, chicken stock and coconut milk to the pot. stir and bring the mixture to a boil.
•use an immersion blender to blend about half of the mixture to create a creamy stew texture. •add the sliced kale and stir.

lentils are an inexpensive, versatile source of protein, so perfect for a meatless meal!

Meatfree wednesday 👍🏼 who needs veggie food on monday when you could have it on wednesday instead 😂 i’ve mentioned before how i’m consuming less meat and i’m actually enjoying it. -
this is just a simple chilli made with quorn mince as opposed to beef mince. i know a lot of people aren’t keen on processed meat substitutes like this but i actually like it.

i made it in exactly the same way i would a meat a chilli but reduced the cooking time. one bag of frozen quorn mince made 2 meals for me. i also used 1 tin of kidney beans and 1 of chopped tomatoes, 1 onion, a glove of garlic and a shed load of chilli flakes. all served with rice and a big mixed salad 🥗

when we think about the impact of meat ... most people think about how it fits into their diet – but when you take a closer look, you see just how huge the cost of meat truly is.

according to the environmental protection agency, an average family of four uses about 400 gallons of water per day for various household activities. however, the epa left out one factor: food. if every member of that family were to eat a cheeseburger for dinner, their daily water usage would increase by thousands of gallons.

farmed animals eat 70 percent of the grains and cereals grown in the united states. it takes 100 calories of grain to produce 3 calories worth of beef and it requires 1,799 gallons of water to produce just one pound of meat. to put that into perspective, an average u.s. swimming pool contains 22,500 gallons of water.

industrial animal agriculture already occupies around 50 percent of the world's arable land, so to make room for more cows, chickens, and pigs, deforestation is the go-to choice. cutting down rainforests and making way for livestock and their feed releases an enormous amount of greenhouse gases – not to mention, the animals release a huge amount on their own right.

Brown rice vs. white rice? what do you guys say??
some people find white rice easier to digest, while others don't notice a difference. if you can tolerate brown rice then always opt for brown over white!

the milling process to obtain white rice removes the rice’s husk, bran & germ essentially where all the nutrients reside. brown rice keeps the fiber, magnesium, selenium, and healthy fat!
