I don't know if this picture would do justice to amma mess at kozhikode, but this is the only picture i have

there are some restaurants that serve food so delicious that i forget that i am a food writer and that i will have to click pictures to post later, amma mess is one such beauty

a small open space with a few tables and chairs where a very minimal meal is served on our dearest vazhayila (banana leaf). rice, chemmeen chammanthi (dried shrimp coconut chutney), a pickle, one thoran and fish curry. despite the mercury levels shooting up and the non availability of an air conditioned room, one would still sweat it out to finish this.
now about the star of the show, the one that is looking at you, the fish fry with the the onion that is sauteed in the leftover oil and masala from frying the fish. 'delectable' would be an understatement!!!!! rate: don't remember, please do comment if you know

I have always visited @vazhiyorakkada with a tummy that is full, yet i order my favorite seafood dishes. this time was no different

a humble yet big spread of rice, parippu (green gram dal), pulissery (spiced buttermilk), kappa (tapioca), chammanthi (coconut chutney), inji (ginger pickle), naranga achar (lime pickle), kichadi (ash gourd with curd and coconut), van payar thoran (red cow beans with coconut and spices) and aviyal (vegetables cooked in spiced coconut paste) along with prawns fry and kanava thoran (squid cooked with spiced coconut

cooking squid is tricky, overcooking leaves it rubbery and that is an unpleasant experience, but this one was cooked perfectly and the masala was delicious. the bits and pieces of coconut in it scores extra points
a roadside eatery with cabins that are super comfortable for families to dine in. neat, clean and with elderly service staff smiling throughout makes it such a memorable experience

Room for 'shrooms
originally residing in the dung encrusted depths of their soil sanctuary, these little hillocks of manly mushrooms and odorous onions have been slowly pancooked down with veal stock and white wine. cooked for a lonnggggg time. a very long time. did i mention, long?
yep, the saucy scent throughout the kitchen whilst these fabulous fungi gave up their juices and flavour nearly drove this poor, starving homecook insane with lascivious longing, drooling with anticipation as the wine level in her glass, sunk to diminishing depths of despair.
then came the oh so careful, shaping and arrangement of the manly 'shrooms to make a delicate dish worthy of the name.

i stood poised before my heart shaped hillock of funky fungi and realised with comic clarity, that i had, in my desire to sniff, snort and nasally inhale these chivilrous champignons, that i had forgotten about my steak. left cold and unloved, uncooked and uncared for on the outer reaches of my kitchen bench...
too famished to wait, my knife and fork held poised in anticipation and i could only watch as those manly 'shrooms cast sly and somewhat sanctimonious glances at the unloved and uncooked who though sadly salted was never to feel the hot sizzle of the cast iron. they smiled in their simple superiority.

For the past week i have strictly eaten vegetarian. and i have got to say... i kinda liked it. i had some fun experimenting with tofu and got creative with my greens. i don’t feel as weighed down after meals and i feel like i have been sleeping better at night. definitely will be throwing a bunch of vegetarian days a week into my schedule. feels good

Meal recipe! shrimp and broccoli fettuccini alfredo with 32g of protein and a secret in the sauce! 😉 this is a great one for those who observe lent (no meat on fridays).

ingredients:
1.5tbsp salted butter
1lb shrimp
1tsp garlic powder
2tsp parsley
1 medium onion; diced
1 head of broccoli; chopped into chunks
1 can of great northern beans; drained and rinsed
1.5c of heavy whipping cream; room temp
1c chicken or vegitable broth
.5c mozarella cheese
salt and pepper
half box fettuccini noodles; cooked
.

directions:
1. melt butter in dutch oven (i use a @lodgecastiron ) over medium heat. add shrimp, garlic powder, and parsley. stir to coat. cook shrimp 3 minutes. remove and set aside.
2. add onion and broccoli, cover and let steam for 6-8 minutes.
3. while broccoli steams, purree beans until smooth (you may have to add a tablespoon or two of heavy cream to the beans if they are not smooth). 4. when broccoli is done, add heavy cream, purreed beans, broth, mozarella, salt and pepper (to taste). bring to a simmer and continue until sauce thickens.
5. add in cooked shrimp and cooked fettuccini. stir until combined.
enjoy entirely!

Zucchini fries 🍟

ingredients (for 4 servings)
2 zucchinis
1 cup panko breadcrumbs (50 g)
½ cup grated parmesan cheese (55 g)
1 tablespoon garlic powder
1 tablespoon dried basil
1 teaspoon salt
1 teaspoon pepper
2 eggs
greek yogurt chive dip
1 cup plain greek yogurt (285 g)
1 tablespoon lemon juice
2 tablespoons fresh chives
¼ teaspoon salt
¼ teaspoon pepper

preparation
preheat oven to 425°f (220°c).
cut zucchini into fries and set aside.
in a large bowl combine panko, parmesan, garlic powder, basil, salt, and pepper.
whisk eggs in a shallow bowl or dish.
dip zucchini in eggs, coating evenly, and then toss in bread crumb mixture.
place on a baking sheet lined with parchment paper. bake for 15-20 minutes, flipping halfway.
prepare dip while fries are baking. combine all dip ingredients in a small bowl and set aside in the refrigerator until ready to use.
enjoy!

Love noodles but don’t want to gain the weight? 🤔
let me tell you how delicious vegetable noodles are. i tried #zucchini & #carrot noodles for the first time last week. i was skeptical 👀
but i love them! since i’m cutting down on meat as well, i paired the noodles with #meatlessmeatballs and voila, i had a great meal!
i was also skeptical that vegetable noodles wouldn’t fill me up, i was wrong! they do fill you up, while satisfying your craving for noodles, without the guilt of gaining weight.
