Meal prep recipe 🍲
chicken burrito bowls = 350 calories😍💪🏼
🍲
chicken burrito bowls
serves 4-6

ingredients
2-3 boneless skinless chicken breasts
3 bell peppers, any color, sliced
1 large red onion, sliced
2 tablespoons olive oil
1 tablespoon taco seasoning
salt and pepper
1 jar salsa
3 cups cooked brown rice, divided
1 can black beans, drained and rinsed
1 can corn
1 cup shredded cheddar cheese
1 lime, sliced into wedges
fresh cilantro to garnish

preparation
preheat oven to 400˚f/200˚c.
line a baking sheet with foil.
place the chicken, peppers, and onions onto the baking sheet and drizzle with oil.
sprinkle the taco seasoning evenly over both sides of the chicken breasts.
salt and pepper the peppers and onions, tossing to coat.
top each chicken b****t with a generous pour of salsa.
bake in a preheated oven for 25 minutes.
rest chicken for 10 minutes, before slicing into strips.
add a base of brown rice to 4 food storage containers. top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. garnish with fresh cilantro and a lime wedge.
store in the refrigerator (and enjoy any extras immediately). can be kept refrigerated for up to 4 days.

sunflower butter- sunflower butter is especially high in vitamin e and selenium. it is also the most allergy-friendly out of the bunch since it’s a seed butter, not a nut. sunflower butter is also packed with antioxidants including phenolic acids and flavonoids as well as magnesium, protein,  and linoleic fatty acids that may help lower blood pressure, cholesterol and blood sugar.⠀

110 days until i get married 👰🏼
5 weeks post hysterectomy 🏥

i am feeling much better (other than getting tired quickly) so now it’s time to stop sulking around, eating every piece of sugar and/or chips i can get my hands on, and get back to eating the way that makes me feel my best. counting the days until i can get back to exercise, but i’m not going to be dumb and start without doctor clearance.

my stomach can handle grains now (hooray for unstuck bowels) but they still make me bloated. so, without going full keto, i am going to cut the grains and sugar (there are exceptions, always), but keep my fruit and veggies intake up, cuz fiber 🙌🏼 really looking forward to eating new delicious meals that make my mouth and belly happy - this just means i need to take the time to meal plan every week. so here i go!

Another recipe comin' atcha!

this is a super easy recipe, super delicious, and meal plan friendly! easy keft overs for lunch or dinner the next couple of days too! let me know if you try this one out!
.
ingredients:
1 spaghetti squash
1 package ground turkey
3-4 cloves of garlic
1 onion
peppers (or any vegatables of your choice!)
saltn'pepper
& other seasonings of your liking!

directions:
1. poke a few holes around spaghetti squash, place into instant p*t whole on wire rack with a cup of water. cook on high pressure for 15 minutes. carefule when you take it out! once cooled, cut in half, and use a fork to shred squash, it will look like spaghetti!
2. cook ground turkey with garlic and onion! i used salt and pepper, you can add whatever flavorings you choose!
3. cook your vegatables! i used some left over peppers here.
4. put spaghetti squash down on plate and pile on turkey and veggies!

optional:
- i crumbled a taco shell on top one night for a crunchy texture!
- if you need a card element, sweet potato works great!
- add a tomato sauce to make it feel more like spaghetti and meatballs!

here’s what you’ll need for each shake: ⁠⠀
