this recipe will be sure to zazzle you zenses 🤩double tap if you love roasted garlic! 😘 zazzling zucchini with roasted garlic
ingredients:
4 garlic heads (about 50 cloves, yum!), peeled
3 tablespoons olive, grape seed or avocado oil, divided
kosher or himalayin salt
fresh ground black pepper
5 scallions, thinly sliced
4 pounds of zucchini and/or yellow summer squash, cut in 1 inch wedges or coins
juice of 1/2 lemon (optional)

directions:
preheat oven to 400 degrees f.
place garlic cloves onto a large piece of foil.
drizzle with oil and lightly sprinkle with salt and pepper. wrap well and roast for 30 minutes.
meanwhile, line 1-2 baking sheets with parchment paper and lay the zucchini out in a single layer.
drizzle with oil and toss lightly to coat. sprinkle with salt and pepper (i like to make sure each piece get a little love)
roast uncovered for 10-12 minutes, until tender crisp. toss with the roasted garlic and serve on a platter.
drizzle with fresh lemon juice (optional). ..

After years of yoyo-ing and binge eating i’m now pretty confident i have the will power to stick to a diet (the evidence being the ~17kgs i’ve lost over the past 4 years 🍕). it just gets harder and harder to make changes to your body the lower your body f*t is and i’ve been wanting to get rid of some stubborn fat

you might have seen from previous posts i’ve been ‘cutting’ for about 6 weeks now to lean out a bit further. i realised a few weeks into my cut that i’m at the stage where i need to up my game with my training to continue making changes to my body and also make sure i don’t lose muscle in the process.
.
i started training with @jimmy_pip_pt about 3 weeks ago who has been helping me work on my lifting technique and creating a programme for me to work on my strength while setting my calories and protein targets. he actually put my calories up from 1500 (what i was initially dieting at) to 1800. 🤗🍗 i’ve been on these calories for the past 3 weeks and my weight has still been steadily dropping. these photos are only 2 weeks apart and i’m pretty shocked by the difference 🤯
.
in 6 weeks i’ve lost nearly 5kgs and in the past 3 have gone 1kg lighter than i’ve ever been in my adult life - so that’s quite exciting 👧🏼 .
another 9 weeks to go and i’ll be continuing at 1800 calories, trying to eat as much as possible and keep cardio low and then make changes when necessary as time goes on. in the meantime jp will be trying to convince me to stop getting d***k at the weekends 🤷🏼‍♀️ i’ll be tracking my results on here like the insta w***e i am 💁🏼‍♀️ ps excuse my face 😂

carbohydrates ➡ have lots of lower carb veggies with some fruit + a starchy carb! brussels sprouts, snap peas, cucumber, celery, carrots, bell peppers, spinach, arugula, strawberries and pineapple🍍+ wild rice blend

protein ➡ chicken burgers, 🍔 turkey zucchini meatballs, marinated grilled chicken and hard boiled eggs
_
healthy fats ➡ pantry is usually filled with these options! have peanut butter and almond butter with roasted cashews for snacks. guacamole to add for salad toppings🥑 also have some of my fav fats for cooking - olive oil, coconut oil + ghee (i also use avocado oil)

bagel ➡️ rice cake - rice cakes are light, easy & go with almost any topping. plus, they only contain 2 ingredients: rice & salt. some bagels contain 14+ ingredients and often have added sugar. if you’re trying to lose weight, a rice cake is a much better, low calorie option.

naked juice ➡️ kombucha - n***d juices are often sugar bombs in disguise. i don’t love the green machine because it acts like it’s mostly greens when really there’s a ton of fruit juice packed in. 16 oz bottle of kombucha is only 50 cals & 12g sugar while n***d juice is 270 cals & 53g sugar.

I s**k in the kitchen so it takes me about 20 minutes to chop all this stuff up, and i do it twice a week. totally worth the time spent, in my opinion. 1 sweet onion, 3 bell peppers (green, red, orange - 1 each) and a ton of celery. this will last me for about 11 meals, and the impact is 16 calories per meal. probably counts as free, but i log it anyway because i'm insane 😂 the difference in texture in the addition of these different flavors to my egg and turkey based meals is amazing. 💪🏼💪🏼

please, please, please keep in mind that there is no one food that will make you f*t if you are in a calorie deficit.

if you are eating fewer calories than your body burns (calorie deficit), then even if you indulge on a cookie or a 1/2 pint of your favorite ice cream, you will not get fat. in fact, you will lose weight.

however, the opposite is also true.
-
if you are eating in a calorie surplus (eating a greater number of calories than your body burns), any additional food that you eat will contribute to weight (and fat) gain.

so, before you judge a food as good or bad, ask yourself if that food is contributing to your goals or not.

and even then, consider that foods are more or less optimal, not good or bad just because the internet told you so.

when you practice moderation and flexible dieting, you can have your cake and eat it too - just make sure portions are controlled. okay?

This didn’t photograph well or stay together well. oh, well, they can’t all be winners. chicken, green onion, guacamole and spring mix wrapped in seasnax. in my head it was going to be kind of like a chicken salad burrito. i added the lettuce to try to keep the seaweed dry, but it didn’t work. this will get me through the afternoon, and i have some baking planned for this evening!
