you’ll need:
thin sliced ham
shredded cheddar cheese
eggs (1 for every slice of ham)
touch of cream
salt and pepper
in a bowl i mixed together eggs, a touch of cream, some salt and pepper.
take a muffin tin and spray with non-stick cooking spray and fold in a piece of ham into each cup, and fill about 3/4 full with the egg mixture. top with cheddar cheese!
bake at 425 for around 12 minutes. awesome for throwing into packed lunches. store in the fridge for about a week. (feel free to add any toppings you like. i decided to keep it simple this time around)

4 large zucchini
2 tbsp. extra-virgin olive oil
kosher salt
freshly ground black pepper
2 c. cherry tomatoes, halved
1 c. mozzarella balls, quartered if large
1/4 c. fresh basil leaves
2 tbsp. balsamic vinegar

directions

1. using a spiralizer, create zoodles out of zucchini.

2. add zoodles to a large bowl, toss with olive oil and season with salt and pepper. let marinate 15 minutes.

3. add tomatoes, mozzarella and basil to zoodles and toss until combined.

these keto pralines with pecans and cream are the ultimate easy holiday dessert...my whole family loves them and only 1 net carb! a quick cook on the stove then they only need a few minutes to firm up in the fridge.⁠

prep time: 5 minutes cook time: 11 minutes chilling time: 1 hourtotal time: 16 minutes servings: 10 calories: 338kcal⁠

ingredients:⁠
2 sticks salted butter⁠
2/3 cup heavy cream⁠
2/3 cup granular sweetener⁠
1/2 teaspoon xanthan gum⁠
2 cups chopped pecans⁠
maldon sea salt⁠

instructions⁠
prepare a cookie sheet with parchment paper or a silicone baking mat.⁠
brown the butter in a saucepan over medium high heat, stirring often. this should take less than 5 minutes. stir in the heavy cream, xanthan gum, and sweetener. remove from the heat.⁠
stir in the nuts and place in the refrigerator to firm up for 1 hour, stirring occasionally. the mixture will get really thick. scoop into 10 cookie shapes onto the prepared baking sheet and sprinkle with the maldon salt, if desired. let refrigerate on the baking sheet until hardened. ⁠
store in an air tight container and keep refrigerated until serving.⁠

instructions:
1. cut chicken into bite sized pieces, dip in egg, coat with flour.

6 days and counting , i can see he is starting to rebel to the restrictions , it was just cutting carbs . after he started eating chicken , he’s back to being rational, so i realized he’s just hangry 🤪🤪 so the challenge is still on.

Keto skillet garlic butter steak and shrimp

ingredients
2 lean new york steak s***p steaks, or steak of choice
salt and pepper
1 tablespoon olive oil
1 tablespoon butter
1 pound large shrimp, peeled and deveined
3 garlic cloves minced
salt and pepper
garlic butter compound:
¼ cup softened butter
3 garlic cloves, minced
1 teaspoon thyme, chopped
1 teaspoon rosemary, chopped
1 teaspoon oregano, chopped
instructions
turn a medium sized skillet to high heat. add the olive oil and butter. add the steaks. cook on each side for 3 minutes or until outside is browned. reduce heat to medium high. cook the steaks to desired doneness. mine took about 8 minutes flipping 3 times to get a medium. remove and set aside on a plate.
reduce the skillet heat to medium. add the shrimp and garlic and cook for 2-3 minutes until opaque. add the steaks back to the skillet. make the garlic butter compound. mix the butter, garlic and fresh chopped herbs. slather on top of steaks.
