A tasty meal recipe for you today! great for lunch or dinner and packed full of colour and nutrients, especially antioxidants!

1/2 a butternut squash, cubed.
2-3 medium sweet potatoes, cubed.
1 red onion, sliced into wedges.
5-6 cloves garlic, peeled and left whole.
1 small courgette, chopped.
12 cherry tomatoes or 4 medium tomatoes, chopped in quarters.
1 pepper, sliced
1/2 head brocolli, chopped.
8-10 mini chicken fillets.
rosemary, fresh or dried.
olive oil .
dressing is the lime, soy and honey recipe i posted a few weeks ago...juice of 2 limes, a teaspoon of honey and some soy sauce to your taste. mix well in a small jar.

place the cubed sweet potato and butternut squash in a baking dish and splash with olive oil to give a light coating of oil. (adding a small amount of oil to foods that contain beta carotene helps the body absorb the vitamin) .
place this in an oven at 180°c for 20 mins while you chop the rest of the veg, place all veg except brocolli in another oven proof dish and splash with a small amount of olive oil. .
place mini fillets in an oven proof dish and sprinkle with the rosemary. .
boil a p*t of water for the brocolli and cook in the boiling water for 2-3 mins only!

after 20 mins, stir the butternut squash and sweet potato and return to oven along with all other ingredients for a further 20 mins. .
chop or tear the chicken fillets into bite sized pieces and mix all ingredients together, including dressing.

The power of perception

a few days ago, i ate a huge amount for lunch, like massive.
more than i needed. and it was great ➡️the past perception story:: 😬i may as well carry on eating a huge amount for the rest of the day
😬i always mess up
😬and even – go and throw up that meal. (i did that for over 6 years)
😬i must go to the gym to burn f*t / calories
😬i’m going to restrict my food for the rest of the week, month ➡️new perception:: 😍i am super fueled to grow stronger at the gym
😍i am feeling pumped with energy tomorrow
😍i’m already full from lunch, i will have a smaller dinner
😍i will listen to my body to see when i’m next hungry, and then eat

same situation >>>> totally different perception >>>> totally different outcome and results

if you wanna change your perception, so it makes no difference if you over eat

one large meal, won’t automatically mean you go on the binge restrict cycle... you effortlessly go back to eating normally, no guilt

Eggs & avocado on toast🥑🍳 simple but so delicious🤤 pic from yesterday but had the same for breakfast today. a filling & nutritious meal filled with fibre, protein & healthy fats! a lot of people have busy lives and making time for breakfast isn’t a priority. give yourself 10-15 extra minutes in the morning to make yourself a nutritious brekkie! it will stop you from choosing the unhealthy option at the grab and go, or grazing on all the snacks throughout the day and ensures you’ve got some good foods into you giving you the energy you need!
if you can’t make time to cook something for breakfast, try having something available in your fridge such as overnight oats, a filling smoothie, or an omelette which can be put into tupperware and eaten on the go or when you get to work!☺️
