ingredients:
spaghetti squash alfredo
1 spaghetti squash, roasted
1/2 cup plain cream cheese (can sub any plain cream cheese)
1/4 cup parmesan cheese
1/2 cup unsweetened almond milk, warmed in the microwave 1 minute
1/2 teaspoon garlic powder
1/4 teaspoon white pepper (or regular pepper)
salt, to taste
chopped parsley (garnish)
-
2 (4-6 oz) chicken b*****s
seasonings if choice (i used garlic powder, dried basil, and dried oregano)
1-2 teaspoons avocado oil or garlic ghee
1). remove “noodle” strands from spaghetti squash; place half in a large bowl and save the rest for later 2) in a blender combine all remaining ingredients, except parsley. blend until smooth. toss with hot spaghetti squash and garnish with parsley. serve with pan-seared chicken b****t (optional).

I’m such a breakfast person and starting with a hearty breakfast is a firm priority of mine, even more so now that i’m up and out early for work in the mornings 🤓. anything that includes oats usually hits the spot, but baked oats are a definite favourite to make fresh or to prep ahead and take on the go.

today’s was a baked vanilla flax oatmeal, details as follows: mix the following ingredients together in a bowl and then pour into a greased ovenproof dish (eg mini loaf tin or an overproof bowl - link in my bio): 1/2 cup oats, 1 egg (or half mashed banana if vg), 1 tbsp flax seeds, 1 tbsp coconut flour (or ground almonds), 1/2 tsp baking powder, 1/2 tsp vanilla extract, a pinch of salt + 1/3 cup milk. bake for 15-20 mins at 180 degrees or microwave on high for 4-5 mins, then serve with greek yoghurt, fruit + a dollop of nut/seed butter (i went for @pipandnut blueberry trail mix almond butter 😍). p.s. i haven’t tried a vegan version without the egg, but i think it’d probably work with a flax/chia egg, it just won’t be quite as spongy. and please do me if you give it a go! ✨

Black bean chilli 🌶
this is a super easy one p*t dish and it’s full of protein. simply sauté onion, celery, carrot and garlic until soft, add spices (paprika, cumin, chilli powder & cayenne pepper), chopped tomatoes, vegetable stock, black beans, kidney beans and mushrooms and simmer for 30 minutes.
finish with coriander and lime juice and top with avocado and fresh tomato salsa 😋

i really struggle with drinking enough water!
i don't crave it and most of the time i'm forcing it only because i know it is good for me. so one thing i do to trick myself into drinking more is i add yummy things to it.

my favorite go to is:
lemon juice
lime juice
honey (less then a tsp per jar)
warm water

i just put it in a jar in the fridge right next to the water jug and pour a bit in to my water.
just a splash goes a long way!

I forget how much i love spaghetti squash until i make it again 🥰 so good! i used a little alfredo, some chicken, mushrooms and spinach and served it along side a salad with bolthouse cesar (tried for the first time, so good) delicious and super filling 😋 •

my cardio for this workout was 2 minutes high intensity jump rope, 2 minutes high intensity treadmill, 3 minutes high intensity bike, and 3 minutes stair stepper. this was such a fun mix of cardio and i may do it more often ;)
this shoulder workout was a lot of fun! i hope everyone remembers to stretch their arms before an ark workout. some people don’t and they think it’s because you don’t need to, but you do. don’t forget to take that extra 10 minutes before & after your workout to stretch everything.

It’s not every day a bride is ok with being upstaged by her flower girls. but lyndsey raby is a-ok with her flower girls being the centre of attention at her wedding. why? because the flower girls in question are in their 70’s and older (one is 90 years old)! the four flower girls are lyndsey’s grandmothers, great grandmother and her grandmother-in-law. although the flower girls were a little bit older than usual, they reportedly brought plenty of energy on the special day.

This is my snowshoeing trail today. although i do not condone using the railroad tracks as a walking path. those big hunks of metal coming down the tracks can be rather quiet when they come up from behind you. i was protected though as i work for this railroad. walked 2.5 miles down the tracks today to get to my work locations. then i got home and did day 5 of home, my 30 day yoga journey with adriene.~eric~

White chicken chili - simple, hearty and healthy. i recommend serving with shredded aged cheddar to really make this dish super delish. good for lunch or dinner and freezes well. enjoy! 😋 #mealprepmonday
white chicken chili (makes about 8 servings)

ingredients
1 lb boneless, skinless chicken breast, chopped
1 large sweet onion, chopped
1 carton (about 4 cups) low sodium chicken stock
2 garlic cloves, minced
2 tsp cumin
2 tsp oregano
1/2 tsp red chilli flakes
1/2 tsp cayenne pepper
1 790ml (~27oz can) can great northern beans, drained and mashed
1 19oz can white kidney beans, drained
6 cups chopped kale or spinach
salt & pepper

method
• sauté onions on medium-high in a little olive oil in a large p*t on the stove for about 5-10 mins, stirring often.
• push the onions to the edges of the p*t to create space in the middle for the chicken. add chicken and brown for about 5 mins. chicken won’t brown if p*t is too crowded so do this step in batches.
• add the garlic and sauté another 2-3 mins.
• add chicken stock and all the spices. bring to a boil then simmer for about 20-30 mins.
• while simmering add in all the beans and spinach.
• season to taste with s&p and serve with aged cheddar.

A rainbow 🌈 of health and goodness!! this is by far one of my fav meals that i have ever made.... i don’t even know what to call it. one of them has brown rice where the other is mixed greens as the base. both contain bell pepper, avocado, broccoli, onion, chicken and halibut marinated, lemon vinaigrette dressing (one with franks hot sauce) ... seriously a burst of flavors in every bite. i could eat this every day! keeps you full and tastes amazing... dont forget the over easy egg on top for the finishing touch!💃🏼👌🏼🥙🥑🥦🌶🥬🍳🐟🐣

Tonight’s dinner was another delicious meal 🤤 one of my favorite meats is turkey sausage!! it never fails to hit the spot & i have it 2-3 times a week 🤩

ingredients: two @shadybrookfarms turkey sausage links, chopped up green & yellow squash 🥒, 1 small chopped up tomato 🍅 + pepper (lots of it) & onion powder. i always tend to slightly overcook my meat b/c i get nervous that i won’t cook it enough (oops). cook veggies in the oven at 400f for ~10 minutes (season them before + after) & cook turkey sausage links on the stove top until they are completely brown 🍳

There’s something comforting about having meals packaged & ready to go, am i right? before the b**e arrived, i’d always prep on weekends so i had meals already planned & portioned for the week. i miss this! i went back to basics this week with meal prep since time is so short these days and i’ve noticed i don’t eat as often as i should because of it. i kept it quick and easy! i was able to make this in 1 hour while james napped
