Sweet and salty chickpea blueberry quinoa bowls.
inspired by @erinireland blueberry quinoa bowl, this served with a leafy green salad was so ridiculously yummy.
i made my own version of blueberry cashew cheese to dollop on top and garnished with fresh mint.
the kids loved it and went back for seconds and thirds until it was all gone!

With these hot days, i can’t seem to get enough of my smoothie bowls!
i add frozen bananas to keep em cool along with so many superfoods and extras.
one thing i love about making a smoothie is that you can ensure you get all your vitamins, minerals and protein.
these beautiful bowls even have yams in them to make them more grounding.
recipe:
1 baked yam, 1 frozen banana, 1 cup of fresh berries, 1 scoop of chocolate h**p powder, 1 tbsp of almond butter, 1 @praninorganic smoothie booster and a splash of coconut water. oh, and cinnamon, lots of cinnamon ☺️
then, the fun part. topping it!🙌🏻
i went with fresh figs, granola, h**p and chia seeds, blueberries and blackberries.
mmmmmmm.

Insatiable hunger

do you ever have days (or even weeks or months) where you feel like you are a bottomless pit and can’t stop eating? it may be enjoyable at first to have such a voracious appetite, but after awhile it can become concerning.
.
what causes this? its the liver and the nervous system craving healthy glucose! if you ever go through a time of not eating enough (due to dieting, not able to eat/hold onto a lot of foods, overexercising, stress) your body will send you signals to eat a lot more food than usual because the liver and nervous system are hungry and in need of healthy glucose. also if the liver is full of toxins and pathogens, there is less space for it to store glucose/glycogen and so you will find yourself craving it more often.
.
sometimes people think, i need to eat more protein or fats so that i can be satiated and while this may seem like it’s working, it often doesn’t get to the root of the issue. the reason proteins and fats may make you feel a little more satiated is because they are harder to digest. this doesn’t work in the long run though because your body is still needing that healthy glucose.
.
so if your body is telling you its hungry, feed it the glucose it needs until you’re full! and as always, it is good to get an adequate amount of mineral salts so make sure to get those too!

soooo darn excited for dinner time 😛

it’s a roasted rooted veg salad night 🍠🥕 thank goodness we have dinner at 6:00pm, because that means i only have four hours to wait 🤪haha

white potatoes seasoned (not for me though they hurt my tummy) 🥔

all to be roasted with being infused with thyme garlic and oil then served up in a bowl on top of raw spinach to make a “dinner goodness bowl”

because i’m prepped for dinner this means more time for play with the kids after school and daycare 🙏🏼 best thing about this mix, there’ll be left overs which will become my lunch goodness bowl tomorrow 🙌

I’m so excited for all our meals this week! this is the first official week that john is joining me for monday to friday meal prep. we each have 15 clean, delicious meals and i only spent $64.57..... that’s $2.15 per meal🙌🏻 my family spends on average $1100 a month on just groceries, that doesn’t count meals out, stopping for snacks and drinks, starbucks... by meal prepping monday to friday and sticking to our list, our family will be saving hundreds a month.

*batata rosti*
ingredientes
4 batatas doce médias
200 g de bacon frito
300 g de mussarela em tiras
1 cebola picada em quadradinhos
cheiro verde a gosto

modo de preparo
colocar água para ferver em uma panela com sal.
descasque as batatas e rale em um ralador grosso para formar fatias finas.
coloque as batatas raladas na água fervendo por 2 ou 3 minutos.
não deixe cozinhar demais.
retire e passe na água fria para parar o cozimento.
em uma frigideira colocar 2 colheres de manteiga e espalhar metade das batatas para fazer a primeira camada.
distribua o bacon, a cebola e cheiro verde sobre a primeira camada.
faça uma nova camada de batatas.
deixe fritar até começar a dourar.
use um prato raso para virar do outro lado (eu usei 2 frigideiras do mesmo tamanho)
quando estiver dourado o outro lado é só servir.

300 g macarrão espaguete integral cozido al dente

🥗 healthy fast food on this first day of february 2020! 😋

it’s been one of those weeks and i haven’t had any time to get to the store since last wkend. 🤦🏼‍♀️ i totally get it when people tell me they just don’t have time. balancing work, family life & everything else + january is super tough to get motivated. so i try my hardest to spend a few hours at least 1x a week making a ton of sh**!! 😜 i usually roast two chickens, roast & steam a bunch of various veggies, make nutt milk for the week, cauliflower mashed, a batch of zucchini brownies 🍫 ... and then i keep my fridge stocked w things i can throw together easily to make a yummy bowl like this one.

full disclosure - we order in pizza at least once a week for the kiddos (yep some weeks it’s 2x🤷🏼‍♀️) ... but i also keep fresh doughs on hand and we whip up our own homemade pizzas for quick dinners in between school & sports. i also love keeping a homemade soup like chicken veggie or butternut squash in the fridge for easy lunches. 🥣

for everyone is the same boat, feeling the time constraints, finding it hard to be motivated to cook this time of year, or you just don’t like cooking 🙊... my advice to you - try to set aside just one day with a chunk of a few hours where you can meal prep a bunch of healthy foods for the week! you’ll be so happy you did it! 😊

#healthystirfry proud to say i have come a long way in my #veggieprep evolution. while maintaining a lowfat diet. i knew i needed to start eating more greens and veggies. so nearly a year ago i started preparing simple bags of frozen veggies by steaming them with only water a little brown sugar, salt, and pepper. .
since then i managed to infuse an old love for various sweet n sour chinese takeout with my lowfat way of life these days.

it started simple and has honestly stayed fairly simple as i'm usually prepping multiple sources of lowfat foods at a time. so now waiting for noodles to boil while a trim chicken has honestly added maybe 2 more minutes to my meal prep days. no big deal.
.
also as i continue aging i don't want to just appear to be in shape by way of staying muscular. i want to continue down this road as a dietician and truly enrich all aspects of my body and health. i find myself always looking to what the future may hold as i have many goals and dreams still to chase. i want to be able to make the most of those years and continue to thrive as age slowly continues creeping up on me.

furthermore i have found many lowfat nutritional options that are far from bland or boring tasting. i generally change up my meal prep everytime yet always ensure i'm getting all the appropriate nutritional sources everytime as well never leaving anything out. if anything exchanging simple carbs like rice for high protein noodles as pictured.

Second food post of the day 🙃 usually i only eat one meal a day but today was an exception.. ate plenty of carbs (120+ grams) in both meals and still in small ketosis.. took a trip back in time to a more bulletproof/paleo type meal with 24 ounces of wild caught skin-on salmon in a homemade teriyaki glaze made with reduced organic maple syrup, organic coconut aminos, sesame oil, sesame seeds, spring onion, and some hot sauce. side of asparagus cooked in grass fed butter and a bed of organic jasmine rice mixed with pasture raised organic eggs, butter, @bulletproof brain octane, and lots of sea salt 👌
