This is 86 year old quintina (she was the fifth child). she makes gnocchetti di ortucchio a few times a month, usually serving it like we ate it that day, with chickpeas and tomato, but on special occasions with baccala (salt cod) or a meat sauce. the dough is a mixture of 00 and finely ground polenta flour that is mixed and kneaded quickly before being rolled and cut into small gnocchi. lovely and warming.
